  • chicken tenderloins
  • mixed colored peppers
  • yellow onion -- use Texas Sweet Vidalia or purple if you like a sweeter onion.
  • chipotles in adobo sauce
  • garlic powder
  • cumin -- ground
  • kosher salt
  • black pepper
  • olive oil

First four steps to completing the recipe for Chicken Kebabs in the oven.
  1. Cut the chicken into 1½-inch cubes and place them into a medium-sized bowl. Top the chicken with the homemade adobo sauce.
  2. Mix until the chicken is fully coated with sauce.
  3. Clean the peppers removing the seeds and stem. Then cut the peppers and onion in strips and place them into the prepared baking dish. Sprinkle with salt and pepper. And, thread the chicken onto the skewers.
  4. Place the prepared skewers in the baking dish on top of the peppers and onions. And, roast for 15-20 minutes at 375℉.

  1. Remove the chicken from the oven once the chicken is cooked and reached an internal temperature of 165℉ (74℃).

You can put anything you desire on a chicken kebob. For this recipe, I only used chicken, but you can also use pineapple, bell peppers, mushrooms, or any other vegetables that you know.

How do you make chicken kabobs?

Chicken kabobs are made by marinating or seasoning the meat and then sliding meat and vegetables onto skewers, and then baking or grilling until done.

What can I marinate chicken in for kebabs?

For this recipe, I marinate the chicken in adobo sauce. But, you can also use teriyaki sauce or your favorite meat marinade recipe. Unflavored Greek Yogurt works really well with the addition of your favorite Greek spices.

How do you make chicken kabobs tender?

To make sure that these kabobs are tender, make sure that you don't overcook them. Cook until just until their internal temperature reaches 165 degrees F. You may also marinate the meat in unflavored yogurt. The yogurt will tenderizes it.

👩🏻‍🍳 Tips

  • If you're grilling the chicken, make sure that you soak your wood skewers in water for at least 30 minutes before you add the chicken to the skewers.
  • Cut the chicken tenderloins into even-sized pieces. This will allow them to cook quickly and evenly.
  • Spray your baking dish with cooking spray so that your chicken kabobs and vegetables do not stick.
  • You can mix the chicken and adobo sauce together and store it in the fridge to marinate for up to 24 hours.
  • If you have some exposed edges of the skewers you can wrap those edges in aluminum foil to prevent them from burning.

📚 Variations

  • Change up the marinade for these kabobs by using bbq sauce, teriyaki sauce, or your favorite chicken marinade recipe.
  • Add vegetables to the skewers, bell peppers, onions, mushrooms, and sliced zucchini all work well for this recipe.
  • Instead of chicken tenderloins, you can also use cut-up steak, cubed chicken breasts, or even your favorite sausage. 
  • Top with a crema. Cool the spicy level down on these skewers by drizzling a lime crema over the top after they are cooked.

🥫 Storage

These chicken kabobs can be stored in an airtight container in the fridge for up to four days. reheat in the microwave or in the oven at 350 degrees until warmed through.

You can also freeze these kabobs for up to three months. Thaw overnight in the fridge and then reheat as desired.

  • Baking dish 13X9-inch
  • Sharp knife
  • Non-skid cutting board
  • Wood skewers
  • Measuring Spoons
  • Dry measuring cups

Ingredients

  • 1½ pounds Chicken tenders
  • 16 ounces Colored Mixed Peppers (these are the smaller peppers)
  • ½ Small white onion chopped
  • 7 ounces Chipotles in Adobo Sauce
  • 1 teaspoon Garlic powder
  • ½ teaspoon Cumin
  • ¼ teaspoon Kosher salt
  • ¼ teaspoon Black pepper
  • 1 Tablespoon Olive oil

Instructions

  • Preheat the oven to 375 ℉. Grease a 9 X 13-inch baking dish with olive oil and set aside.

Adobo Rub Sauce for Chicken

  • Add the adobo sauce, garlic powder, and cumin to a food processor. Pulse for 10 seconds or until pureed. Pour the sauce into a medium-sized bowl.
  • Cut the chicken into 1½-inch cubes and place them into the medium -sized bowl. Mix until the chicken is fully coated with sauce.

Main dish

  • Clean the peppers removing the seeds and stem. Then cut the peppers and onion in strips and place them into the prepared baking dish. Sprinkle with salt and pepper.
  • Thread the chicken onto the skewers.
  • Place the prepared skewers in the baking dish on top of the peppers and onions.
  • Roast for 15-20 minutes at 375℉.
  • Remove the chicken from the oven once the chicken is cooked and reached an internal temperature of 165℉ (74℃).
