- Cut the chicken into 1½-inch cubes and place them into a medium-sized bowl. Top the chicken with the homemade adobo sauce.
- Mix until the chicken is fully coated with sauce.
- Clean the peppers removing the seeds and stem. Then cut the peppers and onion in strips and place them into the prepared baking dish. Sprinkle with salt and pepper. And, thread the chicken onto the skewers.
- Place the prepared skewers in the baking dish on top of the peppers and onions. And, roast for 15-20 minutes at 375℉.
- Remove the chicken from the oven once the chicken is cooked and reached an internal temperature of 165℉ (74℃).

For this recipe, I marinate the chicken in adobo sauce. But, you can also use teriyaki sauce or your favorite meat marinade recipe. Unflavored Greek Yogurt works really well with the addition of your favorite Greek spices.
To make sure that these kabobs are tender, make sure that you don't overcook them. Cook until just until their internal temperature reaches 165 degrees F. You may also marinate the meat in unflavored yogurt. The yogurt will tenderizes it.

- If you're grilling the chicken, make sure that you soak your wood skewers in water for at least 30 minutes before you add the chicken to the skewers.
- Cut the chicken tenderloins into even-sized pieces. This will allow them to cook quickly and evenly.
- Spray your baking dish with cooking spray so that your chicken kabobs and vegetables do not stick.
- You can mix the chicken and adobo sauce together and store it in the fridge to marinate for up to 24 hours.
- If you have some exposed edges of the skewers you can wrap those edges in aluminum foil to prevent them from burning.

Spicy Baked Chicken Kebabs
Equipment Needed
Ingredients
- 1½ pounds Chicken tenders
- 16 ounces Colored Mixed Peppers (these are the smaller peppers)
- ½ Small white onion chopped
- 7 ounces Chipotles in Adobo Sauce
- 1 teaspoon Garlic powder
- ½ teaspoon Cumin
- ¼ teaspoon Kosher salt
- ¼ teaspoon Black pepper
- 1 Tablespoon Olive oil
Instructions
- Preheat the oven to 375 ℉. Grease a 9 X 13-inch baking dish with olive oil and set aside.
Adobo Rub Sauce for Chicken
- Add the adobo sauce, garlic powder, and cumin to a food processor. Pulse for 10 seconds or until pureed. Pour the sauce into a medium-sized bowl.
- Cut the chicken into 1½-inch cubes and place them into the medium -sized bowl. Mix until the chicken is fully coated with sauce.
Main dish
- Clean the peppers removing the seeds and stem. Then cut the peppers and onion in strips and place them into the prepared baking dish. Sprinkle with salt and pepper.
- Thread the chicken onto the skewers.
- Place the prepared skewers in the baking dish on top of the peppers and onions.
- Roast for 15-20 minutes at 375℉.
