👩🏻‍🍳 Tips

  • This salad can easily be doubled if you plan to serve it to a larger crowd or want to enjoy it as a main meal.
  • Leftover honey mustard vinaigrette can be stored in an airtight container in the fridge for up to 1 week. Give it a good shake before using it in freshly assembled salads.
  • This fall harvest salad is stunning. Serve it on a plain white plate to show off the bright colors of the salad ingredients.
  • Always wash the fresh salad ingredients well to reduce the chance of any residue grit getting into your assembled salad.

📚 Variations

  • Consider adding other fresh fruit in this salad such as sliced peaches.
  • I’ve used Honeycrisp apples but you can use any other brand that you enjoy the most.
  • Spring mix lettuce is a great option for getting a variety of greens in one bag but you can also combine your favorite lettuce with a mixture of fresh baby spinach, fresh kale, and arugula.
  • This fall harvest salad recipe wouldn’t be complete with the use of pumpkin seeds and walnuts but feel free to experiment with other seeds and nuts too. You could leave the seeds and nuts raw or roast them for extra depth of flavor.
  • Easily turn this fall harvest salad into a main meal by including some shredded chicken or turkey.
  • Provide extra crunch to your salad by adding some baked croutons just before serving. Don’t add the croutons too early on otherwise they can get soft from the other fresh ingredients.
  • Crumbled goat cheese, blue cheese, and gorgonzola are great alternatives to feta cheese.
  • Make this salad vegan by omitting the cheese and using maple syrup instead of honey in the vinaigrette.

🥫 Storage

Leftover fall harvest salad can be stored in an airtight container in the refrigerator for up to 2 days. Storing your salad any longer than this can result in the fresh ingredients becoming soggy and wilted.
