  1. Begin by toasting the walnuts in a skillet over medium heat for a couple minutes. Be sure to stir the walnuts often, as they can burn quickly.
  2. Make the salad dressing by whisking the olive oil, apple cider vinegar, honey, Dijon mustard, Kosher salt, and ground black pepper together in a small bowl.
  3. Add the arugula, pears, gorgonzola, walnuts, and cranberries to a large bowl.

  • If you can't find arugula, you can use another type of greens in its place. Spinach or kale would be good substitutes.
  • Instead of pears you can use other fruits such as apples, grapes or your favorite berries.
  • Use a different nut for more flavor. You can use pecans or even pine nuts. Notes
  • If you don't like gorgonzola cheese, you can use another type of cheese such as feta or goat cheese.
  • Freshly shaved parmesan cheese would also be a great addition to this recipe.
  • You can add other vegetables to this salad if you prefer such as grated carrots, thinly sliced radishes, bell peppers, or red onions.
