Antipasto Mediterranean Chickpea Salad
Equipment Needed
Ingredients
For Salad
- 2 15.5 oz. cans Chickpeas rinsed and drained
- 1 cup artichoke hearts drained and quartered
- 2 cup baby spinach leaves packed
- 8 ounce mozzarella balls quartered
- ½ cup grape tomatoes halved
- 4 ounces sliced salami quarered
- ¼ cup kalamata olives halved
- ¼ cup peperoncini sliced
- ¼ cup red onion thinly sliced
For Dressing
- ¼ cup extra-virgin olive oil
- ¼ cup red wine vinegar
- ½ teaspoon Italian seasoning
- 1 clove garlic minced
- 1 Tablespoon Dijon mustard
- pinch red pepper flakes
- Kosher salt and black pepper to taste
Instructions
- Combine all the salad ingredients in a large bowl.
- In a smaller bowl or measuring cup, whisk together oil, vinegar, Italian seasoning, garlic, and mustard. Season to taste with red pepper flakes, slat, and black pepper.
- Pour the dressing over the salad and toss until the ingredients are coated with the vinaigrette. Season with more salt and pepper if desired.
