- 1½ pounds Chicken tenders
- 16 ounces Colored Mixed Peppers (these are the smaller peppers)
- ½ Small white onion chopped
- 7 ounces Chipotles in Adobo Sauce
- 1 teaspoon Garlic powder
- ½ teaspoon Cumin
- ¼ teaspoon Kosher salt
- ¼ teaspoon Black pepper
- 1 Tablespoon Olive oil
Adobo Rub Sauce for Chicken
Add the adobo sauce, garlic powder, and cumin to a food processor. Pulse for 10 seconds or until pureed. Pour the sauce into a medium-sized bowl.
Cut the chicken into 1½-inch cubes and place them into the medium -sized bowl. Mix until the chicken is fully coated with sauce.
Main dish
Clean the peppers removing the seeds and stem. Then cut the peppers and onion in strips and place them into the prepared baking dish. Sprinkle with salt and pepper.
Thread the chicken onto the skewers.
Place the prepared skewers in the baking dish on top of the peppers and onions.
Roast for 15-20 minutes at 375℉.
Remove the chicken from the oven once the chicken is cooked and reached an internal temperature of 165℉ (74℃).
