Spicy Baked Chicken Kebabs

Ingredients

  • pounds Chicken tenders
  • 16 ounces Colored Mixed Peppers (these are the smaller peppers)
  • ½ Small white onion chopped
  • 7 ounces Chipotles in Adobo Sauce
  • 1 teaspoon Garlic powder
  • ½ teaspoon Cumin
  • ¼ teaspoon Kosher salt
  • ¼ teaspoon Black pepper
  • 1 Tablespoon Olive oil

Instructions

  • Preheat the oven to 375 ℉. Grease a 9 X 13-inch baking dish with olive oil and set aside.

Adobo Rub Sauce for Chicken

  • Add the adobo sauce, garlic powder, and cumin to a food processor. Pulse for 10 seconds or until pureed. Pour the sauce into a medium-sized bowl.
  • Cut the chicken into 1½-inch cubes and place them into the medium -sized bowl. Mix until the chicken is fully coated with sauce.

Main dish

  • Clean the peppers removing the seeds and stem. Then cut the peppers and onion in strips and place them into the prepared baking dish. Sprinkle with salt and pepper.
  • Thread the chicken onto the skewers.
  • Place the prepared skewers in the baking dish on top of the peppers and onions.
  • Roast for 15-20 minutes at 375℉.
  • Remove the chicken from the oven once the chicken is cooked and reached an internal temperature of 165℉ (74℃).
