  • Butter - Unsalted or salted butter to grease the pie dish.
  • Large eggs - Allow these to reach room temperature before mixing with the rest of the ingredients.
  • Sour cream - Adds a rich and tangy flavor to this baked cabbage casserole and is a good source of moisture too.
  • Mayonnaise - Offers creamy texture and extra tangy flavor.
  • All-purpose flour - Helps to bind the cabbage mixture.
  • Baking powder - Helps to create rise in this cabbage frittata so that it doesn't fall flat.
  • Green cabbage - Finely sliced for the best texture.
  • Cornstarch - Acts as a thickening agent, helping to create a creamy, cohesive texture.
  • Kosher salt - Draws out excess water in the shredded cabbage and helps to soften the cabbage.
  • Green onions - Finely chopped to add to the cabbage mixture with extra to garnish the vegetarian cabbage bake.
  • Fresh dill - Added to the cabbage mixture for fresh flavor.
  • Mozzarella cheese - Freshly grated cheese tastes the best and melts well compared to pre-shredded cheese.

Cheesy cabbage frittata-style bake with fresh herbs.
This cabbage bake is quite a frittata, not precisely a casserole—but it's 100% delicious. The dill and green onion give it a fresh, springy flavor, even on a dreary day.

🥫 Storage

Store leftover green onion dill cabbage bake in an airtight container in the fridge for up to 4 days. Reheat smaller portions in the microwave or larger portions in the oven.

You can freeze this brunch cabbage dish, although cabbage naturally holds a lot of moisture which can cause ice crystals to form. I don't recommend freezing this country cabbage bake for longer than 1-2 months.

📚 Variations

  • Sharp cheddar is a lovely alternative to mozzarella if you prefer a stronger flavor of cheese. Swiss, or Gruyère also melt beautifully and add a deliciously gooey, golden topping.
  • To add more flavor, try using onion powder, garlic powder, or crushed red pepper flakes for a nice kick.
  • Diced onion is a delicious vegetable to add to the cabbage mixture, if you like. Other veggie add-ins could include sautéed mushrooms, bell peppers, zucchini, or spinach.
  • Fresh dill adds a pop of freshness, but you could also use parsley.
  • You can use heavy cream instead of sour cream.
  • Add extra crunch to this cabbage egg bake with a topping of crushed Ritz crackers, panko breadcrumbs, or even French fried onions.

The eggs and cheese make it hearty, while the cabbage and herbs keep it fresh and light. It's simple, savory, and guaranteed to disappear fast.

👩🏻‍🍳 Tips

  • If you prefer the cabbage to be softer, lightly sauté, steam, or blanch it before baking.
  • Cabbage can be a bit bland, so it's key to pair it with rich flavors. That's why I picked sour cream and mayonnaise for the sauce.
  • You'll know when this casserole is done baking by the top turning a golden brown and bubbling slightly.
  • Allow the casserole to sit for 5-10 minutes after baking to let the sauce thicken and flavors meld.

🤔 FAQs

And there you have it—Stella's Country Cabbage Bake, lovingly passed down and cherished ever since that first unforgettable bite. I still remember sitting at her kitchen table, feeling full and amazed. I thought, "What did I just eat—and how can I get more?!" LOL. Luckily for me (and now you!), she scribbled the recipe on a notecard and told me to make it my own.

It's a cavolo (cabbage) dish that feels like a warm abbraccio (hug) every time it comes out of the oven. You can serve it for brunch with friends, as a cozy side for dinner, or even sneak bites straight from the fridge (I’m guilty too!). It brings joy to your table, just like it has for ours.

Let me know if you try it—I'd love to hear how you serve it up! Buon appetito!
