This Italian Potato Salad is a perfect side dish for your dinner table. It's packed with flavor, easy to make, and full of healthy ingredients!   • garlic
  • coarse kosher salt
  • extra-virgin olive oil
  • red wine vinegar
  • freshly ground pepper
  • grape or cherry tomatoes

  1. Bring an inch of water to a boil in a saucepan fitted with a steamer basket.Add potatoes, cover, and steam until the potatoes are tender when pierced with a fork, 12 to 15 minutes.2 ½ lb small red skinned potatoes
  2. Meanwhile, sprinkle ½ teaspoon salt over the minced garlic and mash with the side of a chef’s knife until a paste forms.

  3. And then, scrape the garlic paste into a large bowl. Add the remaining 1 ½ teaspoon salt, oil, vinegar, and pepper.⅓ cup extra-virgin olive oil,¼ cup red wine vinegar,¼ teaspoon freshly ground pepper.
  4. Add the potatoes to the dressing and toss to coat. Let cool in the dressing, tossing occasionally until about room temperature.
The fifth and final step to making the Italian Potato Salad with vinegar and oil.
  1. Add the tomatoes, olives (if using), Salami (if using), red onion, and basil.1 cup cherry tomatoes,½ cup sliced pitted Italian black olives,2 ounces thinly sliced salami,½ cup thinly sliced red onion,½ cup finely chopped fresh basil leaves
The Italian salad is mixed with vinegar and olive oil and combined with antipasto ingredients.
We prefer a no mayonnaise potato salad letting just a bit of vinegar and olive oil dress the ingredients.

6. Toss the potatoes with the veggies, salami, and basil to combine. Season with additional pepper to taste if desired. Serve room temperature or chilled.

  • I recommend that you stick to red onions for this recipe, as they are the best for eating raw.
  • If you'd like, you can also swap out the red wine vinegar and use white balsamic vinegar instead.
  • If you are not a fan of salami you can switch it out for pepperoni instead.
  • The olive oil will solidify in the fridge, just allow the salad to sit at room temperature for a few minutes for it to soften back up.

📚 Variations

  • For an extra flavor punch, try adding capers to the salad.
  • You can also add feta cheese or crumbled goat cheese for a more indulgent version of this salad.
  • For a touch of heat you can add in a pinch of red pepper flakes or cayenne pepper.
  • You could also add other vegetables like bell peppers and celery.

  • 2 ½ lb small red skinned potatoes cut into 1-inch chunks (8 cups)
  • 1 clove garlic minced
  • 2 teaspoons coarse kosher salt divided
  • ⅓ cup extra-virgin olive oil
  • ¼ cup red wine vinegar
  • ¼ teaspoon freshly ground pepper plus more to taste
  • 1 cup grape or cherry tomatoes cut in half
  • ½ cup sliced pitted Italian black olives
  • 2 ounces thinly sliced salami
  • ½ cup thinly sliced red onion
  • ½ cup finely chopped fresh basil leaves

Notes

While we liked this recipe best the first day, it can be made up to two days ahead. The olive oil dressing will solidify in the refrigerator, so bring it out of the fridge about an hour before serving to let the olive oil go back to its liquid state. Stir well before serving.
