- Brie - You'll need 1 wheel of brie cheese for this appetizer.
- Pizza dough - Store-bought refrigerated pizza dough is super convenient for making this recipe. That said, you can always make your own pizza dough from scratch for this appetizer.
- Garlic - Use freshly minced garlic for the best flavor.
- Pizza sauce - Go ahead and use your favorite brand of jarred pizza sauce or use homemade pizza sauce instead.
- Mozzarella cheese - Always use freshly shredded cheese. Pre-shredded cheese isn't as flavorful and won't melt as easily.
- Pepperoni slices - 5 slices is all you need for a delicious meaty addition to this Italian appetizer.
- Garnish - I've used freshly minced basil and grated parmesan cheese to top this pizza appetizer, as you'd expect from a classic Italian pizza.
🗒 Instructions
This is an overview of the instructions. Full instructions are in the recipe card at the bottom of the page.
- Cut the rind from the top of the Brie wheel and discard.
- Spread out the refrigerated pizza dough onto a baking sheet lined with parchment paper.
- Place the Brie wheel in the center of the dough.
- Use sharp kitchen scissors to cut the dough into a circle. The circle must be large enough to cover the sides of the cheese. Discard any excess dough.
- Spoon the garlic and pizza sauce over top of the Brie wheel.
- Top it with grated mozzarella and pepperoni slices.
- Carefully gather the edges of the dough circle and pinch around the top edge of the Brie wheel to form a pizza shape.
- Melt some butter in a small bowl.
- Brush the raw pizza crust with the melted butter.
- Bake the stuffed brie cheese pizza at 425°F for 20 minutes until the cheese is melted and the crust is golden brown.
- Sprinkle the baked pizza with fresh basil and Parmesan cheese.
- Serve your stuffed brie cheese pizza immediately, while the cheese inside is still gooey and warm.
🥫 Storage
Store leftover pizza with brie cheese in an airtight container in the fridge for 3-4 days. The Italian pizza crust may start to lose its crispy texture, but it will still be just as delicious when gently reheated in the oven.
You can also store this holiday appetizer pizza in the freezer, tightly wrapped in plastic wrap and again in foil, for 1-2 months. Thaw in the fridge overnight and reheat in the oven.
📚 Variations
- Get creative with your pizza toppings. Use fig jam, sweet honey drizzle, or caramelized onions for sweet toppings. Prosciutto and sautéed mushrooms are great as alternative savory topping ideas.
- Toss in different herbs like thyme or rosemary, or fresh arugula for an earthy, aromatic layer.
- Leave the rind on the wheel of brie, if you prefer. It is completely edible and will add subtle flavor.
- Use gluten-free pizza dough when assembling this easy stuffed pizza for those with dietary sensitivities.
- You can also brush the pizza crust with olive oil or an egg wash instead of melted butter, if you prefer.
👩🏻🍳 Tips
- Store-bought refrigerated pizza dough is great for convenience, but make sure that it has been brought to room temperature as part of your recipe preparation to prevent any tearing while assembling the appetizer.
- It's a good idea to preheat the baking sheet to ensure a crispy pizza base.
- This easy homemade pizza with brie and toppings is best served immediately for that dreamy, melty texture! Cut it into small wedges or squares for easy serving to your guests as a tasty appetizer.
- If you have leftover pizza dough and don't want it to go to waste, wrap it tightly in plastic wrap and store it in the freezer. Defrost it later and use it to make a variety of different recipes and treats. I've even included some ideas for you in the Notes section of the recipe card below.
🤔 FAQs
Yes! The rind is completely edible and adds a subtle earthy flavor. In this brie pizza recipe, only the top rind is removed to allow the toppings to melt into the cheese.
Yes, you can assemble the stuffed brie cheese pizza up to a few hours in advance. Cover it with plastic wrap and store it in the refrigerator. Bake it just before serving for the best texture.
Refrigerated pizza dough is by far the most convenient option, but you can use homemade pizza dough for a more rustic feel or even puff pastry for a flakier bite-sized version.
There are a few things you can do to avoid a damp or soggy pizza crust. First, preheat the baking sheet that will be used to bake your appetizer for an even browning on the base. You should avoid overloading the appetizer with wet toppings or sauce. Lastly, you can brush the bottom crust lightly with olive oil before assembling for extra crispness.

Ohhhh, amici...this one's special. I actually whipped up this ripiene (stuffed) Brie cheese pizza on a whim one night when family dropped in unexpectedly (as they do!). I was in a rush, had a wedge of Brie, pepperoni, some pizza dough, and not much else — but you know us Italians, we always feed our guests, even if we have to invent something on the fly! 😄
It turned out so good, everyone thought I had planned it ahead. The edges folding up like a rustic crostata, that gooey Brie melting in the center, the pepperoni and basil finishing it off — pure magic.
And ascolta (listen) if you've got leftover dough, don't toss it! Make some mini breadsticks, cheesy bites, or freeze it for next time. Every bit counts in an Italian cucina (kitchen), è vero (right)?
So pour a glass of wine, toss together this easy yet elegant Italian pizza appetizer, and watch everyone fall in love. Buon appetito, amici!
Tutti a tavolo, è pronto!
