👩🏻🍳 Tips
- If you want a thicker consistency to the cream cheese filling, use a powdered Ranch dressing mix that comes in a packet rather than dressing from an actual bottle. The latter can make the filling quite wet but it really depends on preference.
- Grape or cherry tomatoes are the ideal size for these cucumber appetizers. If you don’t have these types of tomatoes then feel free to use regular tomatoes and cut them into bite-size pieces to top the cream cheese filling.
- It’ll definitely be much easier to mix the cream cheese, mayo, and dressing with an electric or stand mixer but if you don’t have one then simply mix by hand. In that case, make sure that the cream cheese has softened by reaching room temperature.
- Use cheap disposable piping bags when assembling these cucumber appetizers otherwise consider using a Ziploc bag and cutting the corner. You won’t be able to use any fancy star tip when using a Ziploc bag but your appetizer will still be super delicious.
- A melon baller is a great tool to use for removing cucumber flesh from the center of each slice. Alternatives include a small scoop or even measuring spoon.
📚 Variations
- Get fancy and use a star tip to pipe the cream cheese filling onto the sliced cucumbers - it’ll look so pretty and seriously sophisticated!
- Go ahead and use the type of cucumber that you enjoy the most. English cucumber is probably the most well known kind of cucumber but you can also use Lebanese cucumber (short but good for slicing), Persian cucumber (good for slicing and eating fresh), or Kirby cucumber (short and good for pickling).
- Make a seafood-inspired cucumber appetizer by garnishing each slice with thin slices of salmon, or even shrimp, over the cream cheese piped filling. You could also combine the cream cheese filling with crab meat!
- Instead of Ranch dressing, consider using Everything Bagel seasoning for a bagel cucumber appetizer.
- Keep this appetizer low-fat by using reduced-fat cream cheese and mayo. It may alter the taste of the filling slightly but will still be super flavorful!
- Add a specific cuisine spin on these cucumber appetizers based on your preference. For example, you could make Korean-inspired cucumber appetizers by garnishing the filling with microgreens, sesame seeds, peanuts, cilantro, and scallions.
🥫 Storage
I don’t recommend storing leftover assembled cucumber appetizers for longer than a day in the refrigerator. The moment you add any seasoning to sliced cucumber, this watery vegetable starts to release even more liquid - not ideal for longer storage!
