Pasta Chips Recipe With Mediterranean Feta Dip

For the pasta chips:
- 8 ounces dried rigatoni or farfalle pasta
- 1 ounce finely grated Parmesan cheese about ½ cup
- 3 tablespoons neutral oil such as olive oil (not extra-virgin), canola, or grapeseed
- 1 teaspoon garlic powder
- 1 teaspoon dry oregano
- 1 teaspoon dry basil
- 1 teaspoon dry thyme
- 1 teaspoon red pepper flakes
- salt and black pepper to taste
- Cooking spray
For the Mediterranean Feta dip:
- 6 ounces crumbled feta cheese
- 3 ounces Greek yogurt ⅓ cup
- 2 garlic clove
- 3 tablespoons olive oil
- 6 or 7 Kalamata olives sliced
- Italian Parsley for garnish on top
Instructions
For the pasta:
- Bring a large pot of salted water to a boil. Add 8 ounces of farfalle pasta and cook according to package instructions until al dente. Do NOT overcook.
- Meanwhile, arrange a rack in the middle of the oven and heat the oven to 400°F. **See Notes (Alternatively, heat an air fryer to 350°F.) Finely grate 1 ounce Parmesan cheese (about ½ cup). Mix the dry ingredients(garlic powder, oregano basil, thyme, red pepper flakes).
- When the pasta is ready, drain it and transfer it to a large bowl. Add 3 tablespoons neutral oil and toss to coat. Sprinkle on the cheese and seasonings. Toss to coat.
- If using the oven, place a piece of parchment paper on a rimmed baking sheet and coat it with cooking spray. Then, add the pasta and arrange it in a single layer so the noodles don’t touch.
- If using the air fryer, spray the basket with cooking spray. If needed, add the pasta in batches and arrange it in a single layer so the noodles don’t touch.
- Bake until crisp and golden, 18 to 25 minutes in the oven or 10 to 12 minutes in the air fryer. Let cool to room temperature.
- Sprinkle with a few chopped parsley leaves on top before serving(this is more for color).
Make the Whipped Feta Dip:
- Add crumbled feta to a food processor and pulse to create small crumbs.
- Add in Greek yogurt and garlic and blend while streaming in the olive oil until the feta is creamy, 4-5 minutes, scraping down the sides as necessary.
- On top, add a few kalamata olive slices with a sprinkle of chopped Italian parsley.
- Serve the pasta chips with the whipped feta dip or Marinara sauce.
