Pasta Chips Recipe With Mediterranean Feta Dip

For the pasta chips:
- 8 ounces dried rigatoni or farfalle pasta
- 1 ounce finely grated Parmesan cheese about ½ cup
- 3 tablespoons neutral oil such as olive oil (not extra-virgin), canola, or grapeseed
- 1 teaspoon garlic powder
- 1 teaspoon dry oregano
- 1 teaspoon dry basil
- 1 teaspoon dry thyme
- 1 teaspoon red pepper flakes
- salt and black pepper to taste
- Cooking spray
For the Mediterranean Feta dip:
- 6 ounces crumbled feta cheese
- 3 ounces Greek yogurt ⅓ cup
- 2 garlic clove
- 3 tablespoons olive oil
- 6 or 7 Kalamata olives sliced
- Italian Parsley for garnish on top

For the pasta:
Bring a large pot of salted water to a boil. Add 8 ounces of farfalle pasta and cook according to package instructions until al dente. Do NOT overcook.
Meanwhile, arrange a rack in the middle of the oven and heat the oven to 400°F. **See Notes (Alternatively, heat an air fryer to 350°F.) Finely grate 1 ounce Parmesan cheese (about ½ cup). Mix the dry ingredients(garlic powder, oregano basil, thyme, red pepper flakes).
When the pasta is ready, drain it and transfer it to a large bowl. Add 3 tablespoons neutral oil and toss to coat. Sprinkle on the cheese and seasonings. Toss to coat.
If using the oven, place a piece of parchment paper on a rimmed baking sheet and coat it with cooking spray. Then, add the pasta and arrange it in a single layer so the noodles don’t touch.
If using the air fryer, spray the basket with cooking spray. If needed, add the pasta in batches and arrange it in a single layer so the noodles don’t touch.
Bake until crisp and golden, 18 to 25 minutes in the oven or 10 to 12 minutes in the air fryer. Let cool to room temperature.
Sprinkle with a few chopped parsley leaves on top before serving(this is more for color).
Make the Whipped Feta Dip:
Add crumbled feta to a food processor and pulse to create small crumbs.
Add in Greek yogurt and garlic and blend while streaming in the olive oil until the feta is creamy, 4-5 minutes, scraping down the sides as necessary.
On top, add a few kalamata olive slices with a sprinkle of chopped Italian parsley.
Serve the pasta chips with the whipped feta dip or Marinara sauce.
NOTE: This snack best uses bite-size pasta shapes like shells, farfalle, or orecchiette. If you try using longer types like spaghetti or linguine, they may overcook and become too crunchy in the oven.
** If your oven has convection mode, use the convection roast. Typically, both the top and bottom heat elements will be utilized with the fan.
TIPS:
- Don't use long types of pasta, such as spaghetti or linguine, as these can overcook easily and become soft and mushy.
- For the best crispy finish, use the convection roast setting if you have an oven with a convection mode. This will heat the top and bottom elements in the oven for an even heating on all sides.
- You might need to cook the pasta chips in batches in the air fryer. This way, you won't overcrowd the basket.
