  1. Whisk the egg in a shallow bowl. In a separate shallow bowl, combine Panko, parmesan cheese, and salt. Coat zucchini slices in egg.
  2. Transfer to a panko bowl and cover the entire chip, pressing the panko mixture into a chip on both sides using a fork.
  3. Spray the air fryer basket with oil or brush with oil. Place zucchini chips in a single layer, leaving space in between. Spray or brush tops with oil.
  4. Cook for 5-6 minutes. Flip and cook another 5 minutes or until golden brown. While the batch is cooking, repeat step 2 to prepare the rest of the zucchini chips.

  • To slice your zucchini you will need a very sharp knife or a mandolin.
  • Try to slice the zucchini as evenly as possible. You want the slices to cook at the same rate, so even slices will help that.
  • Be careful to not overcrowd the air fryer basket, you want the air to move freely around the zucchini chips so that they crisp up nicely.

📚 Variations

  • If you want to add a little additional flavor to these air-fried zucchini chips, you can add some herbs to your breadcrumb mixture. Parsley, garlic, and rosemary all work great.
  • You can use regular breadcrumbs instead of panko, however, it will give your air fryer zucchini chips a different texture.
  • Instead of zucchini, you could also use pickles. However, you will need to ensure that you dry them well.

Leftovers - These are best served fresh however you can store leftovers in an airtight container in the fridge for up to 5 days.

Reheating - Reheat zucchini chips in the air fryer at 300 degrees for 1-2 minutes or until crispy again.

Air Fryer Crunchy Zucchini Chips With Parmesan Cheese

These Crunchy Zucchini Chips are crisp and cheesy on the outside and tender on the inside, they are the best way to use up summer squash from the garden.

  • 1 medium sized zucchini sliced into ⅛ inch thick pieces
  • 1 large egg
  • 1 ¼ cup Panko breadcrumbs
  • ½ cup parmesan cheese grated
  • ½ teaspoon Kosher salt
  • Vegetable oil or spray oil

  • Preheat air fryer to 350 degrees. Whisk egg in shallow bowl. In separate shallow bowl, combine Panko, parmesan cheese, and salt.
  • Coat zucchini slices in egg. Transfer to panko bowl and cover entire chip, pressing panko mixture into chip on both sides using a fork.
  • Spray air fryer basket with oil or brush with oil. Place zucchini chips in single layer, leaving space in between. Spray or brush tops with oil.
  • Cook 5-6 minutes. Flip and cook another 5 minutes or until golden brown.
  • While the batch is cooking, repeat step 2 to prepare the rest of the zucchini chips. Repeat steps 3-4 with remaining zucchini. Serve with ranch dressing or your favorite dipping sauce.

Notes

*Recipe made in 4 liter air fryer in 3 batches.
*Use fresh zucchini. Wash, but do not peel. Slice with sharp paring knife, chef’s knife, or mandoline slicer.
*Panko makes a crunchy layer on the chips. Traditional breadcrumbs will have a different texture.
*Make vegetarian by using vegetarian parmesan cheese.
*Best served immediately. Can be reheated on low temperature in air fryer (300 degrees) for 1 minute.
