If you like mushrooms(we're crazy about them), then I can guarantee that Lemon Garlic Roasted Mushrooms{Funghi Arrostiti con Lemone e Aglio}is for you. This recipe draws its flavors from fresh basil, Italian parsley, garlic, lemon and the star -- crimini mushrooms. It's a perfect hands-off recipe.

You prepare the ingredients then let the oven finish the job. Let me tell you how easy it is.

Prepare the ingredients

Normally we sauté or grill mushrooms but this time, we wanted to try something a little different. I saw this recipe and knew it was the perfect side for a busy family. It has the classic Italian cuisine flavors. The dish has few ingredients, easy to put together and the oven does the cooking.

The preparation steps are simple:

Clean the crimini mushrooms and cut the large ones.

Chop the garlic cloves

Mince the Italian parsley and thinly slice (chiffonade) the basil leaves.

Juice ½ lemon.

In a large bowl, toss the mushrooms with garlic olive oil, salt, and pepper.

Roast the mushrooms

Heat the oven to 450° F. Cover a baking sheet with foil and coat the foil with cooking spray. Spread out the seasoned mushrooms evenly on the baking sheet.

Half way through baking you shake the mushroom pieces and then sprinkle the garlic evenly over the browning mushrooms. Put the mushrooms back in the oven to finish baking.

Serve the roasted mushrooms and take a bow

Once the roasted mushrooms are golden brown and tender, pour them into a serving plate. Sprinkle the basil and minced parsley over the crimini and serve.

Lemon Herb Roasted Mushrooms is an easy and flavorful side with garlic, olive oil, parsley and basil giving the dish an Italian touch. The golden brown mushrooms are rich and full of flavor but very low in calories.

Ingredients

  • 1 lb. crimini mushrooms
  • 2 tbsp. garlic infused olive oil
  • ¼ tsp. Kosher salt
  • 2 garlic cloves chopped
  • Juice of ½ small lemon
  • 1 tbsp. minced Italian parsley flat leaf
  • 5 basil leaves thinly sliced (chiffonade)
  • 1 shallot thinly sliced (optional)

Instructions

  • Heat oven to 450 degrees F. Smooth aluminum foil over a baking tray and spray with cooking oil.
  • Cut large mushrooms into quarters, medium sized mushroom in half and leave small mushroom whole.
  • In a bowl, toss the mushrooms with garlic, shallot (optional) olive oil, salt and pepper. Evenly spread out the mushroom on the prepared baking sheet.
  • Roast the mushrooms for 10 minutes. Add the garlic and stir to combine.
  • Roast until the mushrooms are tender and starting to brown, 7 to 10 minutes.
  • Transfer to a serving bowl and toss with the lemon juice, parsley and basil.
  • Serve

      I like your idea for roasting mushrooms instead of sauteing. I bet the mushrooms develop a great flavor with this method.Can't think of anything better to enhance a steak.
