We make Zucchini Mushroom Onion Sauté several times a month. Not because it's an easy zucchini recipe but because it tastes so good! When we're unsure of what to make as a side, we always fall back on good ole reliable. What could be easier than washing the veggies, cutting them in your desired shape, then cooking them with a little extra-virgin olive oil? And the icing on the cake? Zucchini is good for you!

A versatile vegetable
Do you eat a lot of zucchini? I've seen so many recipes for this veggie that I'm sure there must be an 101 ways to use zucchini.
We love keeping several zucchini in the fridge for stir fries and even zucchini boats.
How you can use zucchini
- deep fry it
- sauté it
- make pasta out of it
- make a bread, cake or muffin out of it
- stuff it and then bake it
- you can grill it
- the possibilities seem endless.
Zucchini is an easy squash to prepare it doesn't care how you cut it
- julienne it,
- slice it,
- half it,
- make long ribbons out of it,
- or use a spiralizer and make pasta out of it.
I think the spiralizer is fantastic -- I've got it on my wish list. 🙂
Using a mandoline with the squash
This time we decided to julienne our squash for the Zucchini Mushroom Onion Sauté. To do that, we used our mandoline.
A mandoline is a tool that's a real time saver. But please be sure to use the holder for the vegetables -- the blade is super sharp and you want to keep your fingers. When we shop for zucchini we look for young, firm, straight squash. They're easier to cut.
We used crimini mushrooms and sliced them about a ¼ " thick and sliced our yellow onion in half and then cut the halves in the same width strips as the zucchini.
We heated 2 Tablespoons of extra-virgin olive oil in a large skillet at medium-high heat and then we added the mushrooms and sautéd for about two minutes.
Once the mushrooms released some of their liquid and started to brown, we added the zucchini and onions. We continued to let the veggies cook until some of the pieces began to brown. Next we seasoned with salt and pepper and our Tuscany seasoning for additional flavor. We sprinkled Parmesan cheese on top.

Zucchini Mushroom Onion Saute
Ingredients
- 3 or more young firm zucchini squash washed { you can mix and match with yellow squash} For cutting ease make sure they are straight and an even diameter. Cut off squash tips and slice each into two even rolls. Secure each roll under the food safety holder and follow the mandoline directions for julienne vegetables. * Note
- 8 oz. crimini mushrooms or white mushrooms -- whatever you prefer-- cleaned and sliced ¼ inch thick
- 1 yellow onion -- peeled halved and sliced the same width as zucchini
- 2 teaspoons dried Italian seasoning
- 2 Tablespoons extra-virgin olive oil
- Kosher salt and black pepper
- Parmesan cheese for sprinkling on top.
Instructions
- In a large skillet heat the extra-virgin olive oil on medium-high heat. Add the mushrooms; stir and cook them until they release some of their liquid and begin to brown.
- Keep the heat on medium-high, mix in the zucchini and onion stirring occasionally. Once the zucchini is tender and some of the veggies have browned, add in the Italian seasoning and salt and pepper to taste.
- Don't overcook -- you want the squash to have some firmness and not be squishy.
- Sprinkle with Parmesan cheese.
Notes
- *Note: If you don't have a mandoline you can use a sharp knife to make the squash into match sticks. Sometimes we just slice zucchini rounds into ¼" thickness.
