Blueberry Bottom Cream Pie

Summer is officially here because  five pound boxes of blueberries are on sale at the grocery store. 

We bought two boxes . . . . for just the two of us. 

I know . . . .

. . . .that is a LOT of blueberries. So now,  we have to come up with some recipes for those delicious nuggets.

Believe me, the little purple { even thought they’re called blue}  fruit will not go to waste . . . . we’ll enjoy every juicy bit. . . .especially when the selection of fruit narrows down in the fall and winter. 

But here is the challenge. . . . I want to make a recipe that’s a little different  . . . .

. . . . but I think I’ve seen just about every possible kind of recipe for blueberries that there is.  

I’ve seen pies . . . .popcycles . . . . ice cream . . . bars . . . . muffins . . . .scones . . . .sauces and syrups . . . .

. . . .smoothies . . . .cakes . . . . I think you get the picture. 

Anything your imagination can come up with has already been done.  

Would you believe  I even saw a pizza made with blueberries?  :-( 

I started dragging out cookbooks . . . . magazines . . . . 

. . . . and nothing. {*sigh*}

I put on my thinking cap and the only thing I could think of was cold and creamy.

So with cold and creamy in mind I thought of the peachy thing pie .

Then I asked myself, why not do something similar . . . . only with blueberries? 

Ecco!  It would be  Blueberry Bottom Cream Pie.

I decided to use a baked pie shell for the bottom and then layer the fillings with the beautiful dark purple blueberry layer on the bottom. 

The middle layer is a lemon creamy filling with lemon zest added for additional tang. The top layer is whipped cream studded with lemon zest   The lemon zest cuts the sweetness of the cream and adds an additional tangy flavor to the topping.

All in all the Blueberry Bottom Cream Pie turned out to be quick and easy as well as eye pleasing with the layers.

I imagine this recipe could also be very versatile if you wanted to sub another fruit . . . .hmmm

Blueberry Bottom Cream Pie is a layered dessert with a beautiful purple blueberry bottom layer, a creamy lemon middle layer and a sweet whipped cream studded with lemon as the fluffy top layer.

  1. 2 packages ( 4-serving size) Lemon Pudding and Pie Filling ( NOT instant)
  2. 1 1/4 cups milk
  3. 1 1/2 cups blueberries, pureed (1 cup)
  4. 1/2 teaspoon cinnamon
  5. 1 baked 9-inch pie shell, cooled
  6. 2 teaspoons grated lemon rind
  7. 3 1/2 cups thawed Whipped Topping
  1. Combine 1 package pie filling mix, 1/4 cup of the milk, the pureed berries and cinnamon in a saucepan. Cook and stir until mixture comes to a full boil. Pour into crust; cover with plastic wrap and chill.
  2. Prepare remaining package pie filling mix with remaining milk as directed on package for pie. Add 1 teaspoon of the lemon rind; pour into bowl and cover with plastic wrap. Chill about 1 hour, until cold. Fold in 1 cup of the whipped topping and spoon over blueberry layer.
  3. Combine remaining whipped topping and lemon rind. Spoon over filling. Freeze for 1 hour or chill in refrigerator 3 hours before serving. Garnish with blueberries and mint leaves, if desired.
  1. We freeze the pie and we take it out of the freezer about an hour before serving.
  2. We don't like having a partial container of whipped topping left over so we usually end up using all of the topping for the dessert - it won't negatively affect the pie at all :-)
