- fresh egg tagliatelle

- heavy cream (500 ml)

- Melt the butter in a large skillet over medium heat.
- Once the butter is melted add the sliced shallot and saute until it starts to turn translucent.
- Once the shallots are ready add the salmon and lemon juice.
- Sauté the salmon over low heat.
- Deglaze the pan with the 4 Tablespoons vodka.
- Add heavy cream and stir until combined.
- Simmer until the cream has reduced to a saucy consistency and the salmon has imparted its wonderful flavor to the cream.
- Add your cooked fettuccine to the sauce and toss. Add a bit more cream if need be.
- Sprinkle the lemon zest on top.
- Serve your Smoked Salmon Fettuccine right away topped with chopped dill

For this recipe, we are using smoked salmon that is already cooked so you will need a couple of minutes to heat it up.
A cream based sauce like alfredo sauce is the best to use for salmon pasta. However, you could also use a light sauce like scampi.

- Fresh pasta really works best for this salmone tagliatelle recipe. You can use dried in a pinch just follow the package directions to cook it.
- When are cooking with fresh egg paste like this it will quickly absorb the sauce so you may need additional heavy cream to prevent it from drying out.
- We prefer to use al dente pasta for the best taste and texture. However, feel free to cook it to your preferences.
📚 Variations
- If you don't have any tagliatelle on hand you can use any type of pasta just make sure that you check the package instructions for the proper cooking time of the pasta that you are using.
- You can add additional flavor to the white sauce by adding a sprinkle of fresh parmesan cheese, and some fresh parsley.
- Don't have shallots on hand? You can use spring onions or green onions instead. However, you can skip the step of sauteeing them and just add them at the end.
- Swap out the vodka for white wine if you don't have vodka on hand.

Storage - Store leftover pasta in an airtight container in the fridge for 2-3 days.
Reheating - Gently reheat in the microwave or on a skillet with a bit of butter or heavy cream if it is on the drier side.

Tagliatelle al Salmone (Pasta With Smoked Salmon in Cream Sauce)
Equipment Needed
Ingredients
- 1 lb fresh egg tagliatelle (500g) may use other pasta *see notes
- 8 oz. smoked salmon (250g) cut into pieces
- 2 Tablespoons butter
- 1 shallot thinly sliced
- 4 Tablespoons vodka
- 1 pint heavy cream (500 ml)
- Salt and pepper q.b. quanto basta (to your taste)
- Fresh dill to serve on top
Instructions
- Cook your pasta al dente in well-salted boiling water.
- Meanwhile, melt the butter in a skillet and add the shallot until it wilts and begins to change color.
- Add the salmon and drizzle with the lemon juice. Sauté the salmon over low heat.
- Deglaze the pan with the 4 Tablespoons vodka.
- Add heavy cream. Simmer until the cream has reduced to a saucy consistency and the salmon has imparted its wonderful flavor to the cream.
- Add your cooked fettuccine to the sauce and toss. Add a bit more cream if need be, making sure that the pasta still 'flows' rather loosely—fresh pasta tends to absorb its sauce quickly, and creamy ones especially quickly.
- Sprinkle the lemon zest on top.
- Serve your Smoked Salmon Fettuccine right away topped with chopped dill.
- No pasta should wait, but this one especially.
