- Cube Steak -- tenderized round steak
- Worcestershire Sauce
- All Purpose Flour
- Cornstarch
- Creole seasoning-- may substitute Cajun seasoning if you'd like it spicier.
- Paprika
- Black Pepper
- Buttermilk

🗒 Instructions

- Evenly spread the Worcestershire Sauce over the steaks and allow to sit for 30 minutes.
- In the first bowl add 1 cup of flour, the corn starch, 1 teaspoon of Creole Seasoning, 1 Teaspoon of Paprika and 1 teaspoon of black pepper. Mix well. In the second bowl add the buttermilk, eggs and hot sauce.
- Take one of the steaks and drop it into the flour mix. Coat all over then drop into the buttermilk mixture. Drop back into the flour mix again until totally coated. Set aside on the baking sheet and repeat with the remaining steaks.
- Drop 2 of the steaks into the oil and fry for about 3-4 minutes on each side. Only turn one time to help keep the breading intact.
- Remove from the oil and place on the baking sheet lined with paper towels.
- Remove the cooking oil from the skillet and add back just ¼ Cup.
- Add ⅓ Cup of flour to the oil and stir with the heat on medium, making a roux.
- Keep stirring and be careful not to burn. If it does burn you will have to start again.
- Once you reach a golden brown color slowly add the milk and the cream. First add the 2 cups of milk then add more if you feel it needs it.
- Add the creole seasoning and black pepper and continue stirring until you get the consistency you are looking for in your gravy.
- Remove the steaks from the oven
- Serve immediately with the gravy on top.

Chicken Fried Steak With Milk Gravy

- 3 pounds Cube Steak tenderized
- 2 Tablespoons Worcestershire Sauce
- 2 ⅓ cups All-purpose flour divided
- 1 cup Cornstarch
- 1 ½ teaspoon Creole Seasoning divided
- 1 teaspoon Paprika
- 2 teaspoons Black Pepper divided
- 1 ½ Cups Buttermilk
- 2 Eggs large, beaten
- 1 teaspoon Hot Sauce
- 2 Cups Vegetable Oil We prefer Peanut Oil for frying.
- 3 Cups Whole Milk
- ½ Cup Heavy Whipping Cream

- Evenly spread the Worcestershire Sauce over the steaks and allow to sit for 30 minutes.
- Preheat oven to about 200℉ for keeping the meat warm.
- Create your dredging station with 2 medium sized bowls and 1 baking sheet lined with paper towels. One bowl is for the flour mix, one is for the egg/milk wash and the baking sheet is for lining up the steaks one they're breaded.
- In the first bowl add 1 cup of flour, the corn starch, 1 teaspoon of Creole Seasoning, 1 teaspoon of Paprika and 1 teaspoon of black pepper. Mix well.
- In the second bowl add the buttermilk, eggs and hot sauce.
- Take one of the steaks and drop it into the flour mix. Coat all over then dip the steak into the buttermilk mixture. Dip the covered meat back into the flour mix again until coated. Set aside on the baking sheet and repeat with the remaining steaks.
