Easy Hearty Vegetable Hamburger Soup

- 1 ½ pound lean ground beef
- 1 onion medium-size diced
- 2 garlic cloves minced
- 2 large yukon gold potatoes peeled and diced
- 4 cups beef broth
- 28 ounces diced tomatoes with juice
- 3 tablespoon tomato paste
- 2 teaspoons Worcestershire sauce
- 1 teaspoon Italian seasoning
- 1 bay leaf
- 1 tsp. Kosher salt
- ½ tsp. black pepper
- 3 cups mixed vegetables fresh or frozen- such as green beans, carrots, celery, peppers
- 3 Tbsp. flat-leaf parsley chopped for garnish
Instructions
- Brown onion, ground beef and garlic until no pink remains. Drain any fat.
- Add potatoes, broth, tomatoes, tomato paste, Worcestershire sauce, seasoning and bay leaves. Simmer covered 10 minutes.
- Stir in vegetables. Simmer 15-20 minutes or until potatoes are tender.
