Crock Pot Lasagna Soup is a set-it-and-forget-it meal that delivers all the irresistible and comforting textures and flavors of classic Italian lasagna without hard work!

This lasagna soup has a rich tomato sauce base, browned Italian sausage and ground beef, and al dente broken lasagna noodles. Top each bowl of soup with freshly grated cheese, a dollop of ricotta, and fresh Italian herbs!

  • Olive oil
  • Lean ground beef
  • Italian sausage

  • Beef broth -- may substitute chicken broth
  • vegetable juice -- like V-8.
  • Crushed tomatoes

First four steps to making lasagna soup in a slow cooker.
  1. Brown the ground beef and Italian ground sausage in a skillet for 3-4 minutes. Add the onion and garlic and cook until the meat is cooked. Drain the excess grease. 
  2. Add the mixture to the Crockpot.
  3. Add tomatoes, beef broth, vegetable juice, Italian seasoning, salt and pepper. 
  4. Stir the ingredients. 
Second four steps for making an easy lasagna soup in a crockpot.
  1. Cover the slow cooker and cook on low for 6-7 hours or high for 4-5 hours. 
  2. Stir in the broken lasagna sheets gently with a wooden spoon.
  3. Cook for 30 minutes or until pasta is tender. 
  4. Season with extra salt and pepper if needed. Top with cheese, parsley, or basil.

What makes lasagna soupy?

Lasagna can become soupy from wet noodles that haven’t been drained well. Too much sauce added between the layers of the lasagna noodles can also create a soupy lasagna.

What is the lasagna noodle trick?

Whether making traditional lasagna or using your lasagna noodles in recipes such as lasagna roll-ups, some advise placing the dry noodles in a bowl of hot water for about 15-20 minutes to soften them so that they are cooked through and easily pliable.

How do you get water out of lasagna?

Drain and rinse the cooked lasagna noodles using a colander, and then dab each noodle carefully with a paper towel while resting the noodles on a sheet of parchment or wax paper. You could add a thickening agent to the sauce and drain excess grease from the browned beef mixture.

What is al dente lasagna?

Al dente lasagna is firm to the bite and not completely cooked through. It’s a good way to ensure that the noodles are not overcooked when served.

👩🏻‍🍳 Tips

  • Reduce cleanup using a Crockpot liner bag instead of spraying the slow cooker pot with non-stick cooking spray. 
  • Reheat leftover lasagna soup in a large Dutch oven over medium-low heat on the stovetop until heated through. 
  • White or whole-grain lasagna noodles can be used in this recipe. Whole-grain noodles absorb more liquid and take longer to cook than white noodles. 
  • Add the uncooked pasta to the slow cooker 30 minutes before serving, or the pasta will become too soft and mushy.

📚 Variations

  • I like to serve my lasagna soup with grated cheese as a delicious topping, but you could incorporate grated cheese into the soup mixture just before serving for a cheesy lasagna soup! Cheddar or mozzarella would work well. 
  • Use gluten-free noodles for food allergies instead of regular lasagna noodles. 
  • Any type of sausage and ground meat can be used in this crockpot lasagna soup recipe. Pork sausage, beef sausage, ground chicken, or ground turkey are all great options. 
  • Reduce the fat content in this soup by using lean ground beef. Regular ground beef will add more flavor to the dish, but you will need to drain any excess grease. 
  • The Italian sausage in this easy soup recipe adds a lovely kick of heat. Cayenne pepper, paprika, red pepper flakes, and Ro-Tel tomatoes can kick the spice level up a notch. 
  • Make a vegetarian lasagna soup by omitting the meat, using vegetable broth, and adding vegan mince or vegetables. Chicken broth can also be an alternative if you don’t have beef broth. 
  • Tomato paste can create a rich tomato broth, although I’ve found the tomato juice and diced tomatoes to be sufficient.

Crockpot lasagna soup can be stored in the refrigerator in an airtight container for 4-5 days. This soup could also be stored in the freezer for 1-3 months, although the lasagna noodles can disintegrate by turning overly soft from the soupy mixture.

Ingredients

Lasagna soup:

  • 1 tablespoon olive oil
  • ½ pound ground beef lean
  • ½ pound Italian sausage
  • 4 cloves garlic minced
  • ½ cup onion diced
  • 32 oz beef broth (4 cups or 1 box)
  • 1 cup vegetable juice
  • 28 oz crushed tomatoes 1 can, undrained
  • 15 oz diced tomatoes 1 can
  • 6-8 dry lasagna noodles broken into small pieces
  • 2 teaspoons Italian seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

Toppings: (optional)

  • Ricotta cheese
  • Mozzarella cheese
  • Shredded parmesan
  • Fresh parsley
  • Fresh basil

Instructions

  • In a large skillet over medium high heat, heat olive oil, and cook ground beef and Italian sausage until half way done, about 3-4 minutes
  • Add in garlic and onion and continue to cook until the meat is cooked through, drain grease
  • Put mixture into crockpot and add in tomatoes, beef broth, vegetable juice, Italian seasoning, salt and pepper
  • Cover and cook on low for 6-7 hours or on high for 4-5 hours
  • Add in pasta and cook for an additional 30 minutes or until pasta is tender, season with extra salt and pepper if needed
  • To serve, top with cheese, parsley or basil and enjoy
  • Store leftovers in refrigerator
