The Ultimate Cabbage Soup

- 2 tablespoon extra-virgin olive oil
- 1 medium yellow onion diced
- 2 carrots chopped
- 1 stalk celery diced
- 2 tablespoon white wine vinegar
- 29 oz. fire roasted tomatoes 2 cans (14.5 ounces each)
- 32 oz. vegetable broth 4 cups
- 15.5 oz. cooked white beans 1 can drained and rinsed
- 4 garlic cloves minced
- 2 medium-size Yukon gold potatoes dices
- 9 cups green cabbage chopped, about 1 pound
- 1 tsp. dried thyme
- ¾ tsp. sea salt
- freshly ground black pepper to taste
- Italian parsley chopped for garnish
Instructions
- Heat the oil in a large Dutch oven or soup pot over medium-high heat. Add the carrots, onions, celery, salt, and several grinds of fresh black pepper. Cook, stirring occasionally to soften the vegetables, about 8 minutes. Two minutes before the vegetables are softened add the garlic.
- Stir in the white vinegar and then add the tomatoes, broth, beans, potatoes, cabbage, and thyme.
- Cover and simmer for 20 to 30 minutes or until the potatoes and cabbage are tender.
- Season with salt and pepper to taste, garnish with fresh chopped parsley and serve.
