Ingredients

  • 2 tablespoon extra-virgin olive oil
  • 1 medium yellow onion diced
  • 2 carrots chopped
  • 1 stalk celery diced
  • 2 tablespoon white wine vinegar
  • 29 oz. fire roasted tomatoes 2 cans (14.5 ounces each)
  • 32 oz. vegetable broth 4 cups
  • 15.5 oz. cooked white beans 1 can drained and rinsed
  • 4 garlic cloves minced
  • 2 medium-size Yukon gold potatoes dices
  • 9 cups green cabbage chopped, about 1 pound
  • 1 tsp. dried thyme
  • ¾ tsp. sea salt
  • freshly ground black pepper to taste
  • Italian parsley chopped for garnish

Instructions

  • Heat the oil in a large Dutch oven or soup pot over medium-high heat. Add the carrots, onions, celery, salt, and several grinds of fresh black pepper.
    Cook, stirring occasionally to soften the vegetables, about 8 minutes. Two minutes before the vegetables are softened add the garlic.
  • Stir in the white vinegar and then add the tomatoes, broth, beans, potatoes, cabbage, and thyme.
  • Cover and simmer for 20 to 30 minutes or until the potatoes and cabbage are tender.
  • Season with salt and pepper to taste, garnish with fresh chopped parsley and serve.

    • This cabbage soup recipe is versatile, allowing you to incorporate a variety of vegetables to fit your dietary needs. To increase the soup's carb content, try adding potatoes or other starchy vegetables, as I have. Alternatively, use less starchy options for a lower-carb option.

    • If you plan on serving a large group or want leftovers, double the recipe for extra servings.
