- 2 tablespoon extra-virgin olive oil
- 1 medium yellow onion diced
- 2 carrots chopped
- 1 stalk celery diced
- 2 tablespoon white wine vinegar
- 29 oz. fire roasted tomatoes 2 cans (14.5 ounces each)
- 32 oz. vegetable broth 4 cups
- 15.5 oz. cooked white beans 1 can drained and rinsed
- 4 garlic cloves minced
- 2 medium-size Yukon gold potatoes dices
- 9 cups green cabbage chopped, about 1 pound
- 1 tsp. dried thyme
- ¾ tsp. sea salt
- freshly ground black pepper to taste
- Italian parsley chopped for garnish
Heat the oil in a large Dutch oven or soup pot over medium-high heat. Add the carrots, onions, celery, salt, and several grinds of fresh black pepper. Cook, stirring occasionally to soften the vegetables, about 8 minutes. Two minutes before the vegetables are softened add the garlic. Stir in the white vinegar and then add the tomatoes, broth, beans, potatoes, cabbage, and thyme.
Cover and simmer for 20 to 30 minutes or until the potatoes and cabbage are tender.
Season with salt and pepper to taste, garnish with fresh chopped parsley and serve.
