- Grape or cherry tomatoes - These burst in the oven to create the base of our sauce.
- Extra-virgin olive oil - Use a good quality one since it's a key flavor component.
- Spreadable cheese such as Boursin - Look for the garlic and herb variety in the specialty cheese section. In a pinch, cream cheese mixed with minced garlic and Italian herbs can work.
- Penne pasta - The tubular shape catches all that creamy sauce inside and out, but any medium pasta shape works great here!
- Parmesan cheese - Adds depth and helps thicken the sauce. Pre-grated works fine, but freshly grated melts better.
- Basil leaves - For garnish and fresh flavor.
- Kosher salt and Ground black pepper - These bring everything together!
🗒 Instructions
This is an overview of the instructions. Full instructions are in the easy weeknight pasta recipe card at the bottom of the page.
- Preheat your oven to 425°F and get a pot of well-salted water boiling for the pasta.
- Toss those cherry tomatoes into a baking dish with olive oil, pepper, and salt until they're nicely coated. Push the tomatoes to the edges and place your Boursin cheese right in the middle.
- Drizzle it with a little more olive oil.
- Pop it in the oven for about 25-30 minutes until the tomatoes are blistered and the cheese has softened and browned on the edges.
- Cook your pasta until al dente (usually about 12 minutes, but check your package). Remember to save some of that starchy pasta water before draining!
- When your tomatoes and cheese are done, add about ¼ cup of pasta water to the baking dish.
- Stir until the cheese has incorporated and created a creamy sauce.
- Add your drained pasta.
- Stir until everything is well-coated.
- Mix in the Parmesan and remaining salt.
- If the sauce seems too thick, add a bit more pasta water until it reaches the perfect consistency.
- Finish with fresh basil and a crack of black pepper and serve right away.
🥫 Storage
Got leftovers? Store your Boursin pasta in an airtight container in the fridge for up to 4 days. The sauce may thicken up, so when reheating, add a splash of water or milk to bring back that creamy texture.
This dish is definitely best fresh off the stove, but still tastes great reheated in a pan over low heat or even in the microwave if you're in a hurry.
📚 Variations
- Add protein: Toss in some rotisserie chicken, sautéed shrimp, or crispy bacon for a heartier meal.
- Change your pasta: The sauce works with any shape, but tubes like penne or rigatoni help capture more of that creamy goodness.
- Try different Boursin flavors: Once you've mastered the classic garlic and herb version, experiment with other Boursin varieties like black pepper or shallot and chive.
- Add more veggies: Toss in some spinach or arugula at the end to wilt into the hot pasta, or add asparagus or zucchini to the baking dish.
- Make it spicy: Add red pepper flakes to the tomatoes before roasting for a nice kick.
👩🏻🍳 Tips
- Don't skimp on the pasta water! That starchy liquid is the secret to a silky, restaurant-quality sauce.
- Let those tomatoes really blister in the oven - the more they burst, the more flavor they release.
- The baking dish might look a bit dry when it comes out of the oven, but don't worry! Once you add the pasta water and stir, it transforms into a beautiful sauce.
- This dish comes together quickly at the end, so have everything ready before your pasta finishes cooking.
