  • Panko breadcrumbs – Creates a crisp, golden topping that adds a wonderful crunch to the creamy pasta. Toasting them in olive oil and salt enhances their flavor and texture.
  • Extra-virgin olive oil – Used to toast the panko and to sauté the mushrooms, adding richness and helping to brown the ingredients perfectly.
  • Kosher salt – Essential for seasoning every component, from the toasted panko to the mushrooms and the pasta water, elevating all the flavors.
  • Rotisserie chicken – A convenient and flavorful shortcut. Using both white and dark meat provides a variety of textures and rich, savory flavor.
  • Mushrooms (assorted) – A mix of varieties like oyster, beech, or cremini provides a deep, earthy flavor and varied texture that forms the hearty backbone of the sauce.
  • Shallots – Offer a milder, sweeter alternative to onions, creating a delicate aromatic base for the sauce.
  • Garlic – Smashed garlic cloves infuse the sauce with a subtle, savory depth without being overpowering.
  • Butter – Adds a touch of richness and helps to sauté the aromatics, contributing to the sauce's velvety texture.
  • Seasoning (Red pepper flakes, fresh thyme) – A warm, herbal blend that adds depth and a subtle kick without overpowering the creamy sauce.
  • Vermouth – Adds brightness and subtle herbal complexity, deglazing the pan and lifting the flavorful browned bits into the sauce.
  • Chicken broth – Forms the savory liquid base of the sauce, providing depth without adding excess salt.
  • Cream – Creates a luxuriously rich and creamy sauce that coats the pasta perfectly.
  • Green peas – Bring a pop of bright color and a touch of sweetness and freshness that cuts through the richness.
  • Rigatoni pasta – The perfect pasta shape for this dish, catching and holding onto every bit of the sauce.
  • Parmigiano-Reggiano cheese – Finely grated cheese melts into the sauce, adding a sharp, nutty flavor and helping to create a glossy, emulsified finish.

🗒 Instructions

This is an overview of the instructions. Full instructions are in the recipe card at the bottom of the page.

The first four steps to the no-bake chicken tetrazzini recipe.
  1. Bring a large pot of water to a boil over high heat while you prepare the toasted panko and sauce.
  2. In a large skillet over medium heat, toast panko with 2 tablespoon olive oil and ¼ teaspoon salt until golden and crisp, 2–3 minutes. Transfer to a plate; wipe the skillet clean.
  3. Heat the remaining olive oil in the skillet over medium-high heat.
  4. Add the mushrooms and sprinkle them with the remaining salt. Cook, stirring occasionally, until the mushrooms are browned and nearly dry, 10-12 minutes.
Steps five through eight to the easy creamy chicken mushroom pasta recipe made in a skillet.
  1. Add the shallots, smashed garlic cloves, and butter. Cook, stirring often, until the shallots have softened and the mixture is fragrant, about 3 minutes. Stir in the thyme and crushed red pepper flakes.
  2. Pour in the vermouth, scraping the bottom of the skillet to loosen the flavorful browned bits. Cook over medium-high heat until the vermouth has almost completely evaporated, about 2 minutes.
  3. Stir in the broth and bring to a simmer. Cook over medium heat, stirring occasionally, until the broth has reduced by half, about 5 minutes. Stir in the heavy cream. Remove the smashed garlic cloves and add the chicken.
  4. Generously salt the boiling pasta water. Add the pasta and cook until molto al dente The pasta should still be quite firm because it will finish cooking in the sauce.
The third and final four steps to making the creamy chicken tetrazzini recipe.
  1. Before transferring the rigatoni, reserve at least 1 cup of the pasta cooking water. Using a spider or slotted spoon, transfer the pasta directly into the skillet with the sauce.
  2. Increase the heat to medium-high and add ½ cup of the pasta water. Add the frozen peas and cook until heated through.
  3. Toss frequently and cook until the rigatoni is al dente and the sauce has thickened slightly, about 2 minutes. Add another splash of pasta water if the sauce becomes too thick.
  4. Remove from the heat and gradually add the cheese, tossing continuously until it melts and the sauce becomes glossy and clings to the rigatoni. Taste and add more salt if needed. Divide among six bowls and finish with the toasted panko and additional Parmigiano-Reggiano.

🥫 Storage

The sauce (without the pasta) can be made ahead and stored in an airtight container in the refrigerator for up to 2 days. While the dish is best served fresh, leftovers can be stored in the refrigerator for 1-2 days.

To reheat, place the pasta in a pan over medium-low heat with a splash of chicken broth or water to loosen the sauce. Reheat gently until warmed through. The toasted panko is best stored separately and sprinkled on just before serving to maintain its crunch.

📚 Variations

  • Mushrooms: Feel free to use any combination of fresh mushrooms you have available. Cremini, shiitake, oyster, or even white button mushrooms all work well.
  • Vermouth substitute: If you don't have dry vermouth, use a dry white wine for a similar effect, or substitute with additional chicken broth plus a small squeeze of lemon juice to mimic its acidity.
  • Herbs: While thyme is traditional, you can substitute with fresh rosemary or sage for a different herbal note.
  • Pasta: This sauce is fantastic with other pasta shapes like spaghetti, fettuccine, or pappardelle. Adjust the cooking time according to the package directions.

👩🏻‍🍳 Tips

  • Toasting the panko until golden and crisp adds a crucial textural element. It's best to do this first so it's ready to sprinkle on at the end.
  • Browning the mushrooms is key to developing a deep, savory flavor. Don't crowd the pan; cook them in a single layer and stir only occasionally to allow them to get nicely browned.
  • Removing the smashed garlic cloves before adding the chicken prevents them from overpowering the dish, leaving a subtle, mellow garlic flavor.
  • The starchy pasta water is crucial for creating an emulsified sauce that clings to the pasta. It helps to thicken the sauce and bind all the ingredients together. Don't skip this step!
  • Transferring the slightly undercooked (molto al dente) pasta directly into the sauce to finish cooking allows it to absorb all the delicious flavors.
  • Adding the cheese off the heat prevents it from clumping and ensures a smooth, glossy finish.

🤔 FAQs

Why do you use rotisserie chicken in chicken tetrazzini?

Rotisserie chicken is a flavorful, economical shortcut that eliminates the need to cook the chicken separately. This saves time because you only need to add it near the end of the sauce preparation. The chicken heats through without becoming dry

What mushrooms are best for chicken tetrazzini?

Cremini, oyster, and beech mushrooms all work beautifully. You may use one variety or combine several varieties for a more complex mushroom flavor and interesting texture.

What can I substitute for dry vermouth?

Use an equal amount of dry white wine. For an alcohol-free substitute, use additional chicken broth with a small squeeze of fresh lemon juice to add a touch of acidity.

Can I make this chicken tetrazzini without canned soup?

Absolutely. This from-scratch sauce uses chicken broth, heavy cream, pasta water, and Parmigiano-Reggiano to create a smooth, creamy consistency without the need for condensed soup.

Can I prepare stovetop chicken tetrazzini ahead of time?

The toasted panko and diced chicken may be prepared one day ahead and stored separately. For the creamiest sauce and best pasta texture, cook and assemble the complete dish shortly before serving.

📞 Chiacchierata (chat)

You know how much I love bringing home a rotisserie chicken. It’s economical, flavorful, and one of my favorite shortcuts for getting a satisfying dinner on the table without spending hours in the kitchen. I use both the white and dark meat so none of that delicious chicken goes to waste.

This Stovetop Chicken Tetrazzini was inspired by Lish Steiling’s No-Bake Chicken Tetrazzini published in Food & Wine. I loved the idea of transforming the familiar baked casserole into a creamy pasta dish that comes together right on the stovetop. Naturally, I couldn’t resist giving it the All Our Way treatment by replacing the freshly cooked chicken thighs with convenient rotisserie chicken and adjusting the method to keep the already-cooked meat tender and juicy.

And, amici, this isn’t the canned-soup tetrazzini many of us remember! Fresh mushrooms, shallots, thyme, dry vermouth, cream, and Parmigiano-Reggiano create a rich, silky sauce with wonderful savory flavor. The peas add a cheerful touch of sweetness and color, while those golden panko breadcrumbs give every serving an irresistible buttery crunch.

The secret is transferring the rigatoni to the skillet while it is still molto al dente—very firm to the bite. As the pasta finishes cooking in the skillet, its starchy cooking water combines with the cream and finely grated cheese to form a glossy sauce that clings to every ridge and fills every tube.

This is the kind of comforting pasta dinner that feels a little special without demanding an entire afternoon in the kitchen. Bring the padella (skillet) to the table, sprinkle on plenty of crisp panko and Parmigiano, and watch how quickly everyone finds a reason to return for another helping. Buon appetito!

  • Liquid measuring cup
  • Chef's Knife
  • Non-skid cutting board
  • Cheese grater

Ingredients

  • ½ cup panko breadcrumbs
  • 4 tablespoons olive oil divided
  • 1 teaspoon kosher salt divided, plus more to taste and for the pasta water
  • 1 pound rotisserie chicken white and dark meat, diced
  • 22 ounces assorted fresh mushrooms torn or cut into bite-size pieces (about 8 cups), such as oyster, beech, or cremini
  • 2 medium shallots finely chopped (about ½ cup)
  • 2 garlic cloves smashed
  • 2 tablespoons unsalted butter
  • 2 teaspoons chopped fresh thyme
  • ½ teaspoon crushed red pepper flakes
  • ½ cup dry vermouth
  • 1 cup lower-sodium chicken broth
  • ½ cup heavy whipping cream
  • 1 cup frozen green peas
  • 1 pound uncooked rigatoni
  • 6 ounces Parmigiano-Reggiano cheese finely grated on the smallest holes of a box grater (about 1½ cups), plus more for serving

Instructions

  • Bring a large pot of water to a boil over high heat while you prepare the toasted panko and sauce.
  • Heat a large, high-sided skillet or braiser over medium heat. Add the panko, 2 tablespoons olive oil, and ¼ teaspoon kosher salt. Cook, stirring often, until the breadcrumbs are crisp and golden brown, 2 to 3 minutes. Transfer the toasted panko to a paper towel-lined plate and set aside. Carefully wipe the skillet clean.
  • Heat the remaining 2 tablespoons olive oil in the skillet over medium-high heat. Add the mushrooms and sprinkle them with the remaining ¾ teaspoon kosher salt. Cook, stirring occasionally, until the mushrooms are browned and nearly dry, 10 to 12 minutes.
  • Add the shallots, smashed garlic cloves, and butter. Cook, stirring often, until the shallots have softened and the mixture is fragrant, about 3 minutes. Stir in the thyme and crushed red pepper flakes.
  • Pour in the vermouth, scraping the bottom of the skillet to loosen the flavorful browned bits. Cook over medium-high heat until the vermouth has almost completely evaporated, about 2 minutes.
  • Stir in the chicken broth and bring the mixture to a simmer. Cook over medium heat, stirring occasionally, until the broth has reduced by approximately half, about 5 minutes.
  • Stir in the heavy cream. Remove and discard the smashed garlic cloves. Add the diced rotisserie chicken, any accumulated chicken juices, and the frozen peas. Cook over low heat for 2 to 3 minutes, or until the chicken and peas are heated through. Keep the sauce warm over low heat while the rigatoni cooks.
  • Generously salt the boiling pasta water. Add the rigatoni and cook, stirring occasionally, until molto al dente—about 2 minutes less than the package directions recommend. The pasta should still be quite firm because it will finish cooking in the sauce.
  • Before transferring the rigatoni, reserve at least 1 cup of the pasta cooking water. Using a spider or slotted spoon, transfer the molto al dente rigatoni directly into the skillet with the sauce.
  • Increase the heat to medium-high and add ½ cup of the reserved pasta water. Toss frequently and cook until the rigatoni is al dente and the sauce has thickened slightly, about 2 minutes. Add another splash of pasta water if the sauce becomes too thick.
  • Remove the skillet from the heat. Gradually add the grated Parmigiano-Reggiano, tossing continuously until the cheese melts and the sauce becomes glossy and clings to the rigatoni. Taste and add more salt if needed.
  • Divide the chicken tetrazzini evenly among six bowls. Finish each serving with the toasted panko and additional Parmigiano-Reggiano. Serve immediately.
