- unsalted butter
- sugar
- orange juice concentrate
- Sweetened condensed milk
- frozen whipped topping

🗒 Instructions

- Mix melted butter, crackers and sugar in a mixing bowl until well combined.
- Press the crackers into the bottom of a 9 x 13-inch glass pan (reserving ¼ cup of the mixture to sprinkle on top). Place the glass pan in the fridge.
- Mix orange juice concentrate with the Eagle Brand sweetened condensed milk.
- Fold in the thawed whipped topping.
- Mix in the mandarin oranges. Remember to save some to put on top.
- Pour the filling on top of the cracker layer. Chill for 15 minutes.
- Sprinkle the remaining cracker crumbs on top. Lay some of the save mandarin orange segments on top.
- Chill for another hour. Serve chilled.

- A glass or ceramic dish really works best for this recipe. I don't recommend using a metal baking dish.
- I prefer to use a food processor so that I can get finely chopped crackers.
- Make sure that you drain the mandarin oranges well, so that your salad with mandarin oranges doesn't become runny.
- If you want nice and clean cuts, use a cold knife or a knife that has been dipped into water and then wiped clean.

Easy Creamy Mandarin Orange Salad With Ritz Crust
Ingredients
Ritz cracker crust:
- 60 Ritz crackers about 2 tubes rolled fine
- ½ cup unsalted butter melted
- ¼ cup sugar
Orange fluff filling:
- 6 oz. orange juice concentrate thawed but still icy
- 14 oz Sweetened condensed milk we like to use Eagle Brand
- 8 oz frozen whipped topping thawed
- 28 oz. Mandarin oranges*** see notes drained and divided (2 cans at about 14 oz. each)

This recipe looks delish and easy to make, but how many servings does this make? I started to print the recipe and noticed it's set for 18 servings, but when I changed it to 24 servings, per your picture with the cut up pieces, the measurement changed.

Hi Jackie! That's because you're telling the recipe you want to increase the size of the recipe. If you want to make it into 24 servings but keep the same recipe amounts just do so when you cut it. When you change the serving size at the number level in the recipe - it will make the quantity adjustments for you. If you only want to make more pieces out of the recipe -- then just do so after it's already made. I hope I've explained it. Happy weekend!!
