First set of four steps to making the cookie brownie bars recipe.
  1. Melt the butter then stir in the cocoa powder.
  2. Whisk in both sugar and salt.
  3. Add the eggs and vanilla and with the electric mixer beat well. ** check out the secret in notes.
  4. Add the flour and mix until almost combined. With a rubber or silicone spatula fold in the chocolate chips by hand. Scrape the batter down from the bowl sides mixing in any remaining flour from the bottom and sides.
Second set of four steps to making the Brookie Recipe.
  1. Transfer the brownie batter to the prepared baking pan and spread it into a thin layer. Set aside.
  2. With the electric mixer cream the butter, and sugars on high for 3 to 4 minutes until light and fluffy. Scrape the batter from the bowl sides and bottom as needed.
  3. Mix in the vanilla and egg. Scrape the bowl down once more.

A collage of the third steps to making the Cookie Brownie recipe Brookies.
  1. With a spatula, fold in the chocolate chips by hand. (If you like, reserve a few tablespoons of chips to sprinkle on top of the brookies when you pull them out of the oven.)
  2. Drop spoonfuls of the cookie batter onto the brownie batter. It doesn't need to cover the bottom layer. We want some of the brownie batter showing through.
  3. Cover with foil and bake at 350℉ for 20 minutes then bake another 20 minutes uncovered.
  4. Allow to cool before removing from pan and cutting.

👩🏻‍🍳 Tips

  • You can make this recipe with milk chocolate chips, dark chocolate chips, or even white chocolate chips.
  • I recommend spraying your baking pan well with nonstick baking spray. You could also line your baking pan with parchment paper if you want easy removal.
  • Be careful not to overmix the batters once you add in the flour. Mix until just combined so that your dough doesn't become tough.
  • It's important that your butter is at room temperature for the chocolate chip cookie part of this dessert. You want a smooth dough. Cold butter will result in lumps.
  • Gently fold in the chocolate chips so that they don't break apart while you are mixing them in.

📚 Variations

  • If you want a little extra crunch in your brookies, you can add chopped nuts to the batter.
  • For a fun twist, try adding a layer of peanut butter or Nutella between the cookie and brownie layers.
  • You can also add peanut butter to the chocolate chip cookie dough if you love peanut butter cookies.
  • Make these bars festive, by topping them with sprinkles that match your occasion.

🥫 Storage

Brookies are best eaten fresh, but they can be stored in an airtight container at room temperature for up to a week.

If you want them to last longer, you can store them in the freezer for up to 3 months. Defrost in the fridge overnight before serving.
