    • Rotisserie Chicken - chilled
    • Celery
    • Red bell pepper

    First four steps to making the chicken salad.
    1. Chop the celery, red bell pepper, and red onion into small cubes.
    2. Place the celery, bell pepper, and onion in a medium bowl.
    3. Gather the spices, seasoning, herbs, mustard, lemon juice, and mayonnaise.
    4. Add these ingredients, together with the mashed avocado, to the bowl.
    The second set of four steps to making the salad with chicken.
    1. Mix well until fully incorporated. 
    2. With a fork, start to remove all of the white and dark meat from the rotisserie chicken.
    3. Place the chicken pieces on a cutting board and roughly chop. Make sure that the chicken skin is not included. 
    4. Add the chopped chicken to the other salad ingredients in the medium bowl and mix well.
    The chopped chicken is mixed with the vegetables and seasonings.
    This chicken salad with avocado is so good we have a hard time keeping from eating it with a spoon.
    1. Top the chicken salad with fresh green onions and chill the salad for 1 hour prior to serving.

    Is Avocado Chicken Salad Low-Carb?

    You bet it is! This chicken avo salad is loaded with ingredients that would definitely pass the test for those following a low-carb or ketogenic diet. To keep your meal low-carb, serve the salad on top of crispy lettuce leaves for a lettuce wrap in place of carb-rich bread.

    Why Did My Avocado Chicken Salad Turn Brown In Storage?

    The mashed avocado will naturally turn a brownish color when it oxidizes (mixes with air). While I’ve added lime juice to the salad to slow this process down, it’s inevitable that the salad can start to look brownish if you store leftovers over a couple of days. 

    How Can I Stop The Avocado From Turning Brown?

    While you can’t stop this process entirely, there are some ways that you can slow it down. Adding lemon or lime juice to the salad helps to keep the avocado a green color for longer. You should also store any leftovers in an airtight container, preferably with a layer of plastic wrap over the surface of the salad. 

    This salad will also taste and look its best soon after the recommended recipe chilling time.

    Can I Make This Salad Ahead of Time?

    Yes! Since you have to chill the salad for 1 hour, it’s already a make-ahead recipe in a way. If you plan to make this salad the night before, leave the mashed avocado out and only mix it into the salad just prior to storing. 

    👩🏻‍🍳 Tips

    • If you plan on making this salad ahead of time, I recommend that you only mix in the mashed avocado with the rest of the ingredients just prior to serving the salad otherwise the mashed avocado may start to turn brown from oxidation. 
    • You can shred the rotisserie chicken with the use of two forks or use a mixer to achieve a finer texture. 
    • When storing leftover avocado chicken salad, press a layer of plastic wrap over the surface of the salad so that there is no air in contact with the salad, even when storing the salad in an airtight container. This will help to slow down the mashed avocado from turning a brownish color. 
    • If you are rushed for time you can skip the chilling of the salad prior to serving although I highly recommend chilling the salad - it helps to infuse all of the flavors of the ingredients together!

    This is no heavy mayo laden chicken salad, the avocado chicken salad is rich tasting yet lighter in calories.

    📚 Variations

    • Other delicious crunchy and juicy salad add-ins include sweet grapes, chopped apples, chopped nuts like almonds and pecans, and sweet relish. 
    • If you don’t want to use mayonnaise in this salad, consider Greek yogurt instead or by using 3 avocados (mashed) in this recipe. Alternatively, simply reduce the amount of mayonnaise used and increase the amount of mashed avocados. 
    • Instead of using rotisserie chicken, use leftover chicken in the refrigerator from other meals or you can cook chicken specifically for this salad if you have the time and energy!
    • Make this salad even more delicious by adding some crispy bacon pieces. 
    • For an added kick of heat, include cayenne pepper in the list of spices used in this salad recipe. 
    • This salad is also great using chopped turkey! If you have any leftover turkey from the holiday season then this is a way to make good use of it. 

    🥫 Storage

    Avocado chicken salad can be stored in an airtight container in the refrigerator for 3-5 days.

    Since this salad contains mayonnaise, I don’t recommend that you freeze the salad since the mayo can separate. The crunchy fresh salad ingredients will also not be as fresh after freezing and thawing.

    Ingredients

    • 7 cups Rotisserie Chicken - store bought and chilled white and dark meat chopped
    • 1 cup Celery, chopped about 2 stalks of celery
    • 1 cup Red Bell Pepper chopped
    • ¼ cup Red onion chopped
    • 1 teaspoon Garlic powder
    • 1 teaspoon Paprika
    • ¼ teaspoon Kosher salt
    • 1 teaspoon Black pepper
    • 1 teaspoon Dijon mustard
    • 1 Tablespoon Lemon juice, freshly squeezed May also use lime juice
    • 2 teaspoons Dill weed
    • 1 Tablespoons Italian Parsley chopped
    • ¼ cup Green onions
    • ½ cup Avocado mayonnaise
    • ½ Avocado

    Equipment Needed

    • Mixing bowl
    • Sharp knife
    • Non-skid cutting board
    • Wooden Mixing spoon

    Instructions

    • Chop the celery, red bell pepper, and red onion into small cubes and place them in a medium-size bowl.
    • Add the garlic, paprika, kosher salt, ground pepper, dijon mustard, freshly squeezed lemon juice, dill week, parsley, green onions, and mayonnaise into the bowl.
    • Mash the avocado in a separate bowl with a fork until smooth and add to the bowl.
    • Mix everything together until fully incorporated.
    • Remove and discard the skin from the chilled chicken. Hand shred the white and dark meat from the chicken bones by using a fork. Place the meat on a cutting board and roughly chop.
    • Place the chopped chicken into the medium-sized bowl and fold into the vegetable mixture until fully coated.
    • Top with fresh green onions for garnish and flavor.
    • Chill for 1 hour before serving.
