🛒 Ingredients

This is an overview of the ingredients. You'll find the full measurements and instructions in the recipe card (printable) at the bottom of the page.

Panna Cotta ingredients:

  • Water – Blooms the gelatin so it dissolves smoothly into the warm cream mixture without clumping.
  • Unflavored gelatin – Gives the panna cotta its delicate structure. Sprinkle it over the water and let it stand for 10 minutes before whisking into the warm cream.
  • Heavy cream – Provides richness and body, giving the panna cotta its luxurious, silky texture.
  • Granulated sugar – Adds sweetness and helps the panna cotta set with a tender, creamy consistency.
  • Lemon zest – Adds a lovely touch of bright, citrusy warmth that complements the buttermilk and fruit.
  • Kosher salt – Enhances and balances all of the flavors in the panna cotta.
  • Buttermilk – Adds tanginess and a lighter, delicately creamy flavor. Use whole buttermilk for the best texture and consistency.
  • Vanilla extract – Adds a warm, aromatic note that pairs beautifully with the lemon zest and fall fruit.

Fall fruit in wine ingredients:

  • Orange – The peel infuses the ruby port sauce with citrusy depth, while 4 tablespoons of fresh juice add brightness. Avoid the bitter white pith when removing the peel.
  • Ruby port – Adds rich, fruity depth and a beautiful deep red color to the compote. The liquid reduces to about ⅔ cup, concentrating its flavor.
  • Cinnamon sticks – Add a warm, aromatic note like that of apple pie spice. A little goes a long way, so use them alongside the orange peel for a cozy, autumnal flavor.
  • Honey – Adds natural sweetness and helps create a glossy, syrupy sauce that clings to the fruit.
  • Apples – Add a tender, sweet-tart bite and concentrated fall flavor. Use a firm, crisp variety such as Honeycrisp or Pink Lady.
  • Red grapes – Add juicy sweetness and a beautiful jewel-toned pop of color. Halve them lengthwise so they soften evenly.
  • Pears – Add a delicate, honeyed sweetness and tender texture. Use firm pears so they hold their shape in the compote.

🗒 Instructions

This is an overview of the instructions. Full instructions are in the recipe card at the bottom of the page.

Collage of the first four steps for the creamy panna cotta buttermilk pudding.
  1. Pour the water into a small bowl and sprinkle the gelatin over. Stir gently, and let stand for 10 minutes.
  2. While the gelatin blooms, add the cream to a saucepan.
  3. Combine the cream with sugar, lemon zest, and salt. Cook over medium heat, stirring, until the sugar dissolves and the mixture begins to simmer, about 3 to 4 minutes.
  4. Remove from the heat and whisk in the gelatin mixture until completely dissolved.
The second set of four steps for the creamy panna cotta dessert with the Fall fruit soaked in ruby port.
  1. Whisk in the buttermilk and vanilla.
  2. Divide the panna cotta mixture among serving glasses or goblets, leaving room at the top for the fruit. Refrigerate until set, at least 8 hours.
  3. Add the two strips of orange peel, freshly squeezed orange juice, and cinnamon sticks to a medium saucepan.
  4. Add the ruby port and honey. Bring to a boil over high heat, stirring to dissolve the honey. Continue to cook, stirring occasionally, until the liquid reduces to about ⅔ cup. Remove and discard the orange peel and cinnamon sticks.
The last four steps to completing the panna cotta with fall fruit recipe.
  1. Add the apples and grapes to the reduced sauce and bring it back to a boil, then reduce the heat to medium and cook for 2 minutes, stirring occasionally.
  2. Add the pears and cook for about 2 minutes more, until the fruit is slightly softened but still holds its shape.
  3. Remove the fruity sauce from the heat and let it stand to cool.
  4. Pour over the chilled panna cotta. Add the topping just before serving, with any extra sauce on the side.

🥫 Storage

Refrigerate the panna cotta and fruit separately for up to 3 days. If the fruit is chilled, you can spoon it straight onto the panna cotta. If you prefer to warm the sauce, just make sure to let it cool enough that it won't melt the creamy panna cotta layer.

Keep the panna cotta covered in the refrigerator so it doesn't absorb any other flavors. The fruit compote can be stored in an airtight container in the fridge and gently rewarmed or served cold, depending on your preference.

📚 Variations

  • Citrus twist: Swap the lemon zest for orange zest in the panna cotta.
  • Try different fruit: Substitute the apples, pears, and grapes with firm plums, figs, or cranberries for a seasonal twist.
  • Alcohol-free: Replace the ruby port with unsweetened grape juice or pomegranate juice and simmer until reduced to about ⅔ cup.
  • Extra creamy: Use half-and-half in place of some of the buttermilk for a richer, denser panna cotta.
  • Spiced panna cotta: Add a pinch of ground cinnamon or cardamom to the creamy mixture.

A proper Italian dessert knows how to make an entrance.

👩🏻‍🍳 Tips

  • Blooming the gelatin is essential! Don't skip the 10-minute rest, or the panna cotta may not set smoothly.
  • Whisk the gelatin mixture into the warm cream until completely dissolved before adding the buttermilk and vanilla. You don't want any clumps in your creamy dessert.
  • Don't let the cream mixture boil hard. A gentle simmer is all you need to dissolve the sugar and incorporate the gelatin.
  • Leave room at the top of each glass or ramekin for the fruit compote so the layers stay distinct and beautiful. This won't matter as much if you are turning the panna cotta base out onto serving plates.
  • Refrigerate the panna cotta for at least 8 hours, preferably overnight, so it sets fully and firms up properly.
  • Cook the apples and grapes first, then add the pears, so all the fruit softens evenly without turning mushy.
  • Let the fruit and sauce cool before spooning over the panna cotta to keep the creamy layer intact.
  • Add the topping just before serving for the best contrast of textures and temperatures.

🤔 FAQs

Can I make buttermilk panna cotta in advance?

Yes. Make it up to 3 days ahead and keep the glasses refrigerated. Add the fruit just before serving.

Can I make the ruby port fruit ahead, too?

Yes. Store the fruit and sauce together in a covered container in the refrigerator for up to 3 days. Keep it separate from the panna cotta until you serve it.

Why use buttermilk in panna cotta?

Buttermilk gives the creamy dessert a gentle tang. That flavor balances the sweet, cinnamon-scented fruit sauce.

Do I serve the fruit warm or cold?

Either works. For the clearest contrast between the fruit and the chilled panna cotta, use cool or chilled fruit. If you’d like it slightly warm, allow it to cool enough that it won’t soften the set cream.

Do I have to unmold the panna cotta?

No. You can set it and serve it in glasses or goblets, which also leaves a nice view of the fruit on top. You can also use custard cups or ramekins to serve it, or unmold it onto dessert plates.

How many glasses will this recipe fill?

Plan on about 8 servings, depending on the size of the glasses and how much space you leave for fruit. Smaller glasses may give you extra servings; larger goblets may give you fewer.

🍽 What to serve with buttermilk panna cotta with fall fruit compote

This buttermilk panna cotta is great as is, but you could certainly enjoy it with a cup of hot coffee or a glass of ruby port. For added decadence, pair it with a scoop of vanilla ice cream, caramel apple-pie ice cream, or cinnamon ice cream. If you'd like a bit of Italian crunch, how about choosing your favorite flavor of biscotti?

📞 Chiacchierata (chat)

I’m always happy when dessert can be waiting for me instead of the other way around. This buttermilk panna cotta needs a long rest in the refrigerator, which makes it just right for a fall dinner with family or friends. I pour it into individual glasses, leaving plenty of room for the fruit that comes later.

And what fruit! Apples, pears, and red grapes take a short bath in ruby port with orange and cinnamon. The fruit stays tender, while the sauce brings a beautiful color and a little warmth to every spoonful. Against the cool, silky panna cotta, it’s such a lovely combination.

I like keeping the two parts separate until serving time. Then I can spoon a generous helping of fruit onto the panna cotta and let some of that sauce run over the cream. The size of your custard cups or glasses determines how many servings you’ll get—and if there’s a bit extra, Honey and I are happy to take it. Che sacrificio! (What a sacrifice!)
