Let it cook for about 2 minutes making sure you stir it all the time. You don't want it to bubble over.

Pour the hot liquid slowly over the dry ingredients. Stir until it is thoroughly mixed.

We put the coated ingredients in a 13X19 Wilton pan that was sprayed with vegetable oil. Bake in a preheated 300F oven for 1 hour 15 minutes, stirring the granola every 20 minutes.

Let the granola cool undisturbed on a cooling rack. This will give you the nice granola chunks.

Add the dried fruit once the homemade granola is cool. If you put the fruit in when the ingredients are hot, you'll have dried pebbles.????

The fruit gets really hard. And yes, we've done it and it does get that hard.

What is the difference between muesli and granola?

Although both kinds of cereal are made up grains, nuts, seeds and dried fruit. Muesli is unbaked while granola is baked along with a fat and sweetener that binds the ingredients together.

You can serve muesli cold or hot while granola is always served cold. Muesli is popular in Europe while granola is very popular in North America.

Ingredients

  • 8 cups Old Fashioned rolled oats
  • 1 ½ cups wheat germ
  • 1 ½ cups oat bran
  • 1 cup raw sunflower seeds
  • 1 cup chopped almonds
  • 1 cup chopped pecans
  • 1 cup chopped walnuts
  • ½ cup ground flax seed
  • ½ cup whole flax seed
  • 1 ½ teaspoons salt
  • ¾ cup brown sugar packed
  • ¼ cup maple syrup
  • ¾ cup honey
  • 1 cup extra virgin coconut oil
  • 1 tablespoon ground cinnamon
  • 1 tablespoon vanilla extract
  • 2 cups raisins or any other dried fruit that you like

Instructions

  • Preheat the oven to 300F. Spray a large baking sheet with vegetable oil. We used a 13 X 19 Wilton baking sheet. You can use two baking sheets and evenly divide the ingredients between the two.
  • Combine the oats, wheat germ, oat bran, sunflower seeds, flax, almonds, pecans, and walnuts in a large bowl.
  • Stir together the salt, brown sugar, maple syrup, honey, extra virgin coconut oil, cinnamon, and vanilla in a deep saucepan. Bring to a boil over medium heat until it is bubbly and then cook two minutes more. Pour the liquid slowly over the dry ingredients and stir to coat. Spread the mixture out evenly on the baking sheet/sheets.
  • Bake in the preheated oven until crispy and toasted, about 1 hour and 15 minutes. Stir every 20 minutes. It should turn a golden brown. Cool the granola on a cooling rack, once it is cool stir in the dried fruit. Store in an airtight container.

Notes

  • We keep the granola in an airtight container in the freezer and it stays very fresh tasting.
