- All-purpose flour -- to make these lemon bars gluten-free replace the regular flour with gluten-free.
- Confectioners sugar
- Butter -- may use salted or unsalted
- Vanilla extract -- for optimum flavor use pure extract

- Granulated sugar - this is white sugar
- All-purpose flour - to make this gluten free, use gluten-free flour
- Lemon juice - use freshly squeezed

- Add the crust ingredients into the bowl.
- And mix with a hand mixer on low speed for 2 minutes until the consistency is crumbly.
- Preheat the oven to 350 degrees and grease the baking dish.
- Pour the crust mixture into the baking dish.
- Make sure to add the all of the crust to the baking dish
- Then press the crust firmly into the baking dish.
- Bake the crust for 22 minutes until the edges are golden brown. Remove the pan from the oven and place it on a cooling rack. (The crust does NOT need to cool beyond the time it takes to prepare the lemon custard.)
- While the crust is cooling add all the custard ingredients to a mixing bowl.
- Use a hand mixer on low for 2 minutes until the consistency is smooth and silky.
- Pour the lemon custard over the crust.
- Bake for 25 minutes. Use a toothpick to make sure the lemon custard comes out clean.
- Place the baking dish on a cooling rack for 1 hour until cooled. Transfer the pan to the fridge for 2 hours or until chilled. Cut into 20 bars. Sprinkle with powdered sugar, if desired. Add an additional lemon slice (optional).

Old-Fashioned Easy Lemon Bars

Crust Ingredients
- 1½ cups All-purpose flour
- ⅔ cup Confectioners sugar
- ¾ cup Butter softened (1-½ sticks)
- ¼ teaspoon Vanilla extract
- ¼ teaspoon Baking soda
- ¼ teaspoon Lemon zest
Lemon Custard Filling
- 6 Eggs
- 2 cups Granulated sugar
- 6 Tablespoons All-purpose flour
- ½ cup Freshly squeezed lemon juice about 1-½ lemons
- ½ teaspoon Lemon zest
Instructions
Lemon Bar Crust
- Preheat the oven to 350℉. Grease a 9X13 baking pan with butter and set aside.
- Add the crust ingredients into the bowl and mix with a hand mixer on low speed for 2 minutes until the consistency is crumbly.
- Bake the crust for 22 minutes until the edges are golden brown.
- Remove the pan from the oven and place on a cooling rack. (The crust does NOT need to cool beyond the time it takes to prepare the lemon custard.)
Lemon Custard Filling
- In a bowl add the lemon custard ingredients.
- Use a hand mixer on low for 2 minutes until the consistency is smooth and silky.
- Pour the lemon custard over the crust.
- Bake for 25 minutes. Use a toothpick to make sure the lemon custard comes out clean.
- Place the baking dish on a cooling rack for 1 hour until cooled. Transfer the pan to the fridge for 2 hours or until chilled.
- Cut into 20 bars.
- Sprinkle with powdered sugar, if desired. Add an additional lemon slice (optional)
Notes
- Use a glass or ceramic pan. Do not use metal, the lemon bars will taste metallic.
- Always use fresh juice over store-bought. The taste will be more flavorful with fresh juice.
- The bars may seem wobbly and not fully set, even though the toothpick comes out clean, but they will continue to bake while cooling and set.
- The chill time is extremely important for the bars to be completely set.
- These can be gluten-free by replacing the all-purpose flour with gluten-free all purpose flour.
