Viral TikTok One-Pot French Onion Pasta

- 2 tablespoon olive oil
- 3 onions sliced - can be all yellow or a mix of yellow and red.
- 1 cup dry white wine
- 2 tsp. kosher salt will probably need more after tasting
- 2 teaspoons herbes de Provence
- 1 teaspoon black pepper freshly ground
- 8 cloves fresh garlic chopped
- 1 pound pasta we use spaghetti
- 2 cups beef stock or broth Make sure it's HOT - may also use Better than Bouillon
- 2 cups water Keep the water HOT!
- 8 ounce Gruyère cheese or Swiss cheese Cubed
- 2 Tablespoons butter May use salted or unsalted
Heat the olive oil in a large pot or skillet with high sides over medium heat. Add the onions, white wine and kosher slat. Raise heat to high, and cook until the wine evaporates.
Lower the heat to medium-low, and add the herbes de Provence and black pepper. Cook 30 minutes, stirring with a wooden spoon every once in a while.
Add the garlic. Cook an additional 30 minutes over medium-low heat , until the onion are caramelized, a deep golden brown color.
Add the dry spaghetti to the skillet and the hot beef stock. Raise the heat to medium-high and simmer. It will take around 5 minutes for the spaghetti to soften enough to mix.
When the beef stock nearly evaporates, continue adding to water, mixing, and simmering, until the pasta is nearly cooked al dente, 12-15 minutes. (It does take longer with this method) Add the cheese and cook either on low or with the heat turned off, mixing the pasta to allow the cheese to melt in.
Add the butter and parsley and mix. Taste for salt — add more since this will make a HUGE difference.
Tips for Making One-Pot French Onion Pasta

- Keep hot water handy. The recipe says to keep 2 cups of hot water on hand during the pasta cooking process, but I found it's helpful to keep water boiling in a pot. This way you don't have to worry about the temperature dropping. You may end up needing more than 2 cups to achieve the right level of creaminess.3.
- Be patient! The long cook time is worth it. One you take your first bite you'll see what we mean.
