Creamy Angel Hair Pasta With Parmesan, Garlic, Herb Sauce

Ingredients

  • 2 teaspoon extra-virgin olive oil
  • 6 garlic cloves minced
  • 2 Tablespoons butter unsalted
  • ¼ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 3 cups chicken stock
  • 8 ounces angel hair pasta
  • 1 cup parmesan cheese grated
  • ¾ cup heavy cream
  • 1 Tablespoon dried parsley
  • Fresh parsley chopped (garnish)
  • pinch red pepper flakes optional

Instructions

  • In a large pot or Dutch oven, heat olive oil over medium-low heat. Add the garlic and stir, allowing it to cook for 1-2 minutes.
    Watch carefully so it doesn't burn.
  • Add the butter; cook until melted.
  • Add the kosher salt, black pepper, red pepper flakes (optional) and chicken stock.
  • Turn the heat up to high and let the stock come to a boil. Add the pasta and cook for 4-5 minutes.
  • Once the pasta is tender, reduct the heat to medium and stir in the parmesan, cream, and parsley until the cheese is completely melted.
  • Remove from heat and serve immediately with a sprinkle of chopped parsley.

Notes

STORAGE:
Leftovers can be stored in the fridge for up five days in an airtight container. Reheat in the microwave or in a skillet on the stovetop. If the pasta is too thick, you can also thin it a little with heavy cream or milk.
I do not recommend freezing this pasta because of the dairy content in it. Plus, the pasta will be mushy when thawed and reheated.
TIPS:
  • Be very careful to not overcook the garlic. It can burn quickly when you are sautéing it.
  • Because angel hair pasta is so fine, you want to be careful so that you don't cook it too long.
  • Use high-quality parmesan cheese so it melts smoothly and helps thicken the sauce.
