10ouncespackage of frozen chopped spinach thawed and drained well
6tablespoonsmelted butter
1teaspoongarlic powder
½tablespoonblack pepper
¼teaspoonground thyme
½teaspoonsalt
1 ½cupsItalian seasoned breadcrumbs or stuffing mix crumbs — see note
1cupgrated parmesan cheese
½yellow onion diced very small
Instructions
Preheat your oven to 350 ℉ degrees. Grease a baking sheet or vegetable spray parchment paper and set aside.
Combine all of the ingredients in a large bowl.
Using a medium cookie scoop, make 1-inch balls.
Place them on the baking sheet and bake for 30 minutes or until golden brown.
Notes
The original recipe called for stuffing mix crumbs (not cubes). Since those are difficult to find at times, I substituted bread crumbs. Please feel free to substitute back in the stuffing mix if you can find it.
