Quick and Easy CHICKEN MEXICAN PIZZA

In this nontraditional version of the classic fajita, chicken is layered with ingredients such as bell peppers and onions, creating a flavor reminiscent of the original.

Ingredients

  • 2 boneless skinless chicken breasts cut into 2X½-inch strips
  • 1 Tablespoons olive oil
  • 1-2 teaspoons chili powder your choice of how spicy you like it
  • ½ - 1 teaspoon salt
  • ½ teaspoon garlic powder
  • 1 cup red onions thinly sliced
  • 1 ¼ cup combination of green and red bell pepper cut into 2X½-inch strips
  • 13.8 oz. Pillsbury All Ready Pizza Crust may also use your own recipe
  • ¾ cup salsa or picante sauce use either mild or hot
  • 8 oz. Monterey Jack Cheese. (add more if you like it cheesy). 2 cups shredded

Instructions

  • In a large skillet over medium-high heat, stir-fry the chicken in oil for 5 minutes or until lightly browned. It's a simple step; you've got this!
  • Stir in chili powder, salt, and garlic powder.
  • Add onions and bell peppers; stir-fry an additional 1 minutes or until vegetables are crisp-tender.
  • Heat oven to 425℉. Grease a 12-inch pizza pan or a 13X9-inch baking pan. Unroll the dough and place it in the greased pan; starting at the center, press out with your hands.
  • Bake for 6 to 8 minutes or until very light golden brown.
  • Spoon chicken mixture over partially baked crust. Spoon salsa over chicken; sprinkle with cheese.
  • Bake for 14 to 18 minutes or until the crust is golden brown.
  • Serves 6 to 8.

Ingredient Info: Any salsa works for this pizza, so choose the spiciness you prefer.
Ingredient Substitution: 2 cups of frozen bell pepper and onion stir-fry mixture can be used instead of the fresh bell peppers and onion.
