Ingredients

  • 1 cup plain Greek yogurt
  • cup avocado oil + 1 tablespoon divided
  • Juice from 1 lemon
  • 1 tablespoon white vinegar
  • 3 garlic cloves minced
  • 1 teaspoon honey
  • 1 teaspoon oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon coarse kosher salt
  • ½ teaspoon black pepper
  • 1 pound chicken breasts 4 chicken breasts
  • 2 tablespoons chopped parsley

Instructions

  • To a Ziplock bag, add the Greek yogurt, ⅛ cup avocado oil, lemon juice, vinegar, minced garlic, honey, oregano, thyme, paprika, salt, pepper, and chicken. Mix until combined.
  • Allow it to marinate for at least 1 hour to overnight.
  • In a skillet over medium heat, add 1 tablespoon of avocado oil and allow it to heat for 3 minutes.
  • Cook each side of the chicken for 4 to 7 minutes. The time depends on how thick the chicken is. The chicken is done when the juices run clear. It should also reach an internal temperature of 165°F.
  • Top with parsley.

Store leftover marinated Greek chicken breast in an airtight container for 4-5 days. You can store these chicken breasts in the freezer for up to 3 months. Later, you can thaw them and use them in other recipes, like soups or casseroles.

    • Try to use pieces of chicken that are similar in size to ensure even cooking.
