Heavenly Brioche French Toast Casserole

This heavenly golden Brioche French Toast Casserole recipe is a delightful combination of an eggy custard infused with vanilla and a hint of cinnamon and nutmeg.

Ingredients

French toast:

  • Cooking spray
  • 16 oz, brioche bread sliced
  • 8 leggs large
  • 3 cups half-and-half
  • cup dark brown sugar packed
  • 1 Tbsp. vanilla extract
  • 1 tsp. ground cinnamon
  • ¼ tsp. Kosher salt

Brown sugar crumble topping

  • ½ cup packed dark brown sugar
  • ½ cup all-purpose flour
  • ½ tsp. ground cinnamon
  • ¼ tsp. ground nutmeg
  • ½ cup unsalted butter at room temperature
  • Powdered sugar for dusting

Instructions

Fill dish with bread slices:

  • Spray a 9-x 13-in. baking dish with cooking spray.
    Cut the bread slices into quarters to make squares, and arrange them in four rows in the baking dish.

Prepare the egg mixture:

  • Whisk the eggs until the whites and yolks are well-combined.

    Whisk in half-and-half, brown sugar, vanilla, cinnamon, and salt.

    Slowly pour over the casserole, letting it seep down into the bread.

    Cover with plastic wrap and let stand at room temperature for 1 hour.

Prepare the oven:

  • Preheat the oven to 350°F.

Make the crumble topping:

  • Stir together the brown sugar, flour, cinnamon, and nutmeg in a small bowl.

    Work in the softened butter until the mixture forms a thick paste. 
    Refrigerate until needed.

Bake the casserole:

  • Remove the plastic wrap from the casserole, and crumble the topping over the top of the casserole.

    Bake, uncovered, for 45 to 50 minutes or until set and golden brown.
    A knife inserted into the center should come out moist, but clean.

Finish casserole:

  • Let stand for 20 minutes on a cooling rack before serving the casserole warm, dusted with powdered sugar.
    Serve with warm maple syrup, flavored syrup, and fresh fruit.

Notes

Should you dry out brioche before making French toast casserole?

Stale bread works better in French toast and French toast casseroles. Fresh bread won't soak up the egg custard as quickly, which won't create the beautiful texture when baked. You can also dry out fresh bread by putting it in a 200°F oven for 20 to 25 minutes.



Can I use other types of bread for French toast casserole?
All sorts of breads will work for French toast casserole. Whatever you use, it's better if the bread is stale or dried out slightly.
