This Green Goddess chopped salad is filled with green veggies: a green cabbage base with cucumber and scallion. The creamy homemade dressing includes green veggies. The salad resembles a chunky dip, so we suggest pita chips to scoop up the salad.
Add lemon juice, olive oil, tahini, vinegar, garlic, shallots, scallions, spinach, dill, nutritional yeast, and oregano to a blender. Blend until smooth, then season to taste with salt and pepper.
In a large bowl, toss cabbage, cucumbers, scallions, and feta until combined. Pour over the dressing and toss to coat. Garnish with dill and sesame seeds, and serve with pita.
Notes
If you want to keep the salad vegan, you can either omit the feta, find vegan feta, or add crumbled firm tofu.
