Cream Cheese Cucumber Sandwiches

These Kentucky Benedictine Cucumber Sandwiches are a refreshing and creamy Southern classic made with cucumber, cream cheese, dill, and green onions. Elegant enough for high tea, easy enough for everyday snacking.

Ingredients

  • 16 oz cream cheese 2-8-oz packages, softened
  • ½ cup green onions minced
  • 1 cup cucumber peeled, seeded, and chopped
  • 4 Tbsp. dill chopped
  • 2 Tbsp. mayonnaise
  • ½ tsp. pepper
  • ½ tsp. salt
  • 2 loaves sliced white bread

Instructions

  • Stir together the first 7 ingredients to create the Benedictine spread.
  • Spread mixture on 24 slices of white bread, and top with remaining bread slices to create sandwiches.
  • Trim away sandwich crusts, and cut each sandwich into 4 triangles with a serrated knife to create tea sandwiches.
