Chicken Caesar Salad Tortilla Cones

Who said salad had to be served in a bowl? These easy handheld Chicken Caesar Salad Tortilla Cones are a fun twist on a classic. The salad is tossed with your favorite Caesar dressing and packed into a crisp cone you can eat on the go!

Ingredients

  • 2 full size tortillas cut in half lengthwise
  • Cooking spray
  • 1 head romaine lettuce
  • Rotisserie chicken breast chopped
  • Caesar dressing of choice
  • Parmesan cheese freshly grated

Instructions

  • Preheat oven to 400F and line a baking sheet with parchment.
  • 
Lay the tortillas on a clean work surface. Roll them into cone shapes and use a toothpick to secure each one closed. Use small pieces of crumpled up aluminum foil inside of each cone to help them hold their shape.
  • Place the cones onto the baking sheet and spray them with cooking spray.
  • 
Bake for 10-15 minutes, until golden brown. Set aside.
  • In a large bowl, place the chopped romaine lettuce, plus chopped chicken breast, and Caesar dressing. Mix to coat evenly.
  • Add the freshly grated Parmesan cheese and give it a final toss.
  • Scoop the Caesar salad mixture into the tortilla cones.

Notes

STORAGE: 
Serve and eat these tortilla cones with Caesar salad right after you make them. The crispy tortilla cones can get soggy from the filling.
Leftover Caesar salad can be stored in an airtight container in the fridge for up to 1-2 days.
I recommend only making these tortilla cones just before serving for the best crunchy texture. You can store leftover cones in an airtight container at room temperature for 1-2 days. However, they may lose some of their crispiness. Revive your stored cones by heating them in the oven at 350°F for 3-5 minutes or in the air fryer for 1-2 minutes.
TIPS:
    • Load the tortilla cones with Caesar salad just before serving as a way to preserve the crispy texture of the cones.
    • Turn the tortilla cones over midway through baking to ensure an even browning on all sides. This isn't absolutely necessary, but a good way to ensure an even crisp.
    •  Be sure to spray the tortilla cones or coat them lightly with melted butter before baking. This helps create a crispy outside. A crispy exterior adds great texture to the dish and makes a sturdy vessel for the salad.
    • Don't forget to remove the toothpicks from the baked cones before serving!
