Bang Bang Dynamite Shrimp (copycat PF Chang's)

- 1 lb Medium-sized shrimp shelled, deveined, and rinsed
- ¾ cup Buttermilk
- ¾ cup Cornstarch
- ½ cup Mayonnaise
- ¼ teaspoon Old Bay Seasoning
- ¼ cup Thai Sweet Chili Sauce
- ¼ cup Sriracha
- 1 cup Avocado oil
- 3 Tablespoons Green onion chopped

Make the sauce by measuring the mayonnaise, Old Bay Seasoning, Thai Sweet Chili Sauce, and Sriracha into a small bowl. Mix and set aide. Add the shrimp and buttermilk into a medium-sized bowl and mix until the shrimp is fully coated.
Place the cornstarch in a large bowl. Remove the shrimp from the buttermilk. Let them drain a little bit, and place the shrimp in the cornstarch.Make sure the shrimp are fully coated with the cornstarch. In a Dutch oven or cast-iron skillet add the avocado oil. Heat to 375℉ on medium heat. Use tongs by placing one shrimp in the oil to test for bubbles. Place the shrimp in one at a time and fry for 1-2 minutes on each side.
Take the fried shrimp out of the pan and place them on a baking rack.
Once all the shrimp are cooked immediately add the shrimp to a bowl with ¾ of the sauce. Mix until fully coated.
Use the remainder of the sauce to drizzle over the shrimp before serving.
Top with the green onion.
Serve immediately.
