Arrabbiata Sauce- Spicy and Smokey Classically Italian

This is a spicy, smokey rich tomato sauce. The heat is pleasant and not overwhelming. You can easily adjust it to "All Your Way"

Ingredients

  • 2 Tablespoons olive oil
  • 1 cup chopped onion
  • 7 cloves garlic
  • 1- 6 ounce can tomato paste
  • 2 Tablespoons basil pesto
  • 1 teaspoon brown sugar
  • ½ cup dry red wine
  • 2 teaspoons crushed red pepper flakes
  • ¼ teaspoon ground black pepper
  • 2- 28 ounce cans of San Marzano tomatoes crushed
  • 2 bay leaves
  • 1 ½ teaspoons smoked paprika

Instructions

  • Heat the oil in a large saute pan over medium-high heat. Saute the onion and garlic until soft for about 5 minutes being careful not to burn the garlic.
  • Stir in the tomato paste, basil pesto, brown sugar, red wine,crushed red pepper flakes, black pepper and combine.
  • Add the crushed tomatoes, bay leaves, and smoked paprika. Bring to a simmer and cook uncovered for about 30 minutes.
  • Season to taste with salt and additional pepper and remove bay leaves before serving.

Notes

**For a 4 person serving use 1 pound pasta. Penne is the usual pasta that's served with the Arrabbiata sauce. Follow the package directions. 
½ cup chopped basil to sprinkle on top.
