Crockpot Golden Angel Chicken With Creamy Mushroom Sauce

Ingredients

  • pounds Boneless, skinless chicken breast halves about 4 breast
  • 1 Tablespoon Vegetable oil
  • 8 ounces Fresh White Button mushrooms, quartered
  • 8 ounces Fresh shiitake mushrooms, stems removed, caps sliced
  • ¼ cup unsalted butter
  • 0.7 ounce Italian dry salad dressing mix package
  • 10.75 ounce Can condensed Golden Mushroom Soup
  • ½ cup Dry White wine May substitute Chicken stock
  • ½ of 8 ounce Tub Cream Cheese Spread with chives and onion
  • Chives - garnish optional
  • 12 ounces Angel Hair pasta

Instructions

  • Brown the chicken on both sides in a large skillet in hot oil over medium heat.
  • Combine mushrooms in the slow cooker; top with chicken.
  • Melt butter in a medium saucepan.
  • Stir in the Italian dressing mix.
  • Whisk in the mushroom soup, white wine, and cream cheese and continue to stir until the cream cheese is melted.
  • Pour over chicken.
  • Cover; cook on low-heat setting for 4-5 hours (this may depend on your crockpot.)
  • Serve chicken and sauce over cooked pasta or rice. Sprinkle with chives.

Notes

  • Spray the slow cooker well with cooking spray for easy clean up or use a slow cooker liner.
  • If you don't have golden mushroom soup on hand you can use cream of mushroom soup.
  • Trim the fat off the chicken breasts before you add them to the slow cooker for best results.
  • Serve this dish with mashed potatoes, rice, or noodles. If you are low carb you could also eat it just as it is.
  • This recipe is best made with fresh mushrooms. Shiitake and white button mushrooms can be found at most grocery stores. If you can't find fresh mushrooms, you can substitute with canned mushrooms. Just make sure to drain them well before adding them to the slow cooker.
