Easy One Pan Creamy Italian Chicken With Gnocchi Dinner

One-pan chicken with gnocchi is a comforting and well-balanced dish, bursting with a creamy aromatic sauce, soft gnocchi, and tender juicy sliced chicken.

Ingredients

  • 1 ½ lbs. Chicken breasts boneless, skinless
  • Salt and Black Pepper
  • 2 Tablespoons Olive Oil Extra virgin
  • 1 Shallot diced
  • 8 oz. Baby Bella Mushrooms sliced
  • 2 Cloves Garlic
  • 2 teaspoon Fresh thyme leaves
  • 1 teaspoon Oregano dried
  • 1 cup Chicken broth low-sodium
  • 1 ¼ cup Half and Half
  • Crushed Red Pepper Flakes a pinch
  • 17 oz. Package Gnocchi
  • ¾ cup Mozzarella shredded
  • ½ cup Parmesan cheese freshly grated
  • 3 cups Baby Spinach

Instructions

  • Season chicken on both sides with salt and pepper
  • In a large skillet over medium-high heat, heat 1 Tablespoon olive oil. Add chicken and cook until golden, 4 minutes. Remove from skillet.
  • Reduce heat to medium and add remaining 1 Tablespoon olive oil. Add shallot and mushrooms and cook until golden, 5 minutes.
  • Add garlic, thyme and oregano and cook until fragrant, 1 minute more.
  • Add broth broth and scrape up any brown bits on the bottom of pan, then slowly add in half and half. Bring to a simmer and season with salt, pepper, and a pinch of red pepper flakes.
  • Stir in gnocchi and return chicken to pan. Let simmer until chicken is cooked through and the internal temperature of the chicken breasts reach 165℉, 8 to 10 minutes, stirring occasionally.
  • Remove chicken from skillet.
  • Add cheeses and stir until melted, then add spinach and stir until the spinach is wilted.
  • Slice the chicken breast and return it to the skillet. Taste. Season with more salt and pepper if needed.
