Orange Creamsicle Bars

Crust:
- 1 c vanilla oreo crumbs
- 6 Tbs melted butter
Cheesecake layer:
- ½ c heavy cream + ¼ c powdered sugar
- 16 oz cream cheese
- 1 c sugar
- ½ c powdered sugar
- 1 ½ teaspoon vanilla
- ¼ teaspoon salt
Orange layer:
- 1 c heavy cream + ¼ c powdered sugar
- 4 Tbs orange jello mix
- 16 oz cream cheese
- 1 c sugar
- ½ c powdered sugar
- 1 teaspoon orange extract
- ¼ teaspoon salt
Whipped topping:
- 1 ½ c heavy cream
- ½ c powdered sugar
Line a loaf pan with parchment paper for easy removal later. In a medium mixing bowl, combine the vanilla Oreo crumbs and melted butter. Mix thoroughly until the mixture resembles wet sand. Press the mixture into an even layer in the bottom of the loaf pan. Place into the fridge while you make the cheesecake layer. In the bowl of a stand mixer, add the heavy cream and ¼ c powdered sugar. Using a whisk attachment, whip on medium high speed for 5-6 minutes or until a thick whipped cream has formed. Add the remaining ingredients to the bowl with the whipped cream.Whisk on medium high speed for another 2 minutes or until completely smooth and incorporated. Pour cheesecake mixture into the loaf pan, on top of the crust. Smooth out. Cover with plastic wrap and place into the fridge or freezer to chill for at least 1 hour. Once the cheesecake layer has chilled, make the orange layer. Start by adding the heavy cream, ¼ c powdered sugar and jello mix to the bowl of a stand mixer fitted with a whisk attachment. Whisk on medium high speed for 5-6 minutes or until a thick whipped cream has formed. Spoon the mixture into a separate bowl and set aside. Add the remaining ingredients to the bowl of a stand mixer. Whisk on medium high speed for 4 minutes or until smooth. Add the orange whipped cream into the cream cheese mixture and whisk for 1 minute to incorporate.Spoon and smooth the mixture over the cheesecake layer. Cover with plastic wrap and place into the fridge to chill for at least 1 hour. Once the orange layer has chilled, make the whipped cream for the topping. Add the heavy cream and powdered sugar to the bowl of a stand mixer fitted with a whisk attachment. Whisk on medium high speed for 5-6 minutes or until a thick whipped cream has formed. Spoon into a piping bag fitted with a star tip. Pipe in a snake formation on top of the orange layer. The bars are now ready to serve. Be sure to keep refrigerated until ready to serve.
Storage: Bars may be stored in an airtight container in the fridge for up to 5 days or in the freezer for up to 3 months.
