Cucumber Appetizer Bites With Cream Cheese

These stuffed Cucumber Appetizers are refreshing summer party snacks that’ll only take you 15 minutes to whip up with such ease! They look stunning and taste just as good!

Ingredients

  • 2 Cucumbers medium size
  • 12 Grape tomatoes or Cherry tomatoes
  • 4 ounces Cream cheese softened
  • 1 Tablespoons Mayonnaise
  • 3 Tablespoons Prepared Ranch Dressing
  • 1 Tablespoon Fresh dill finely minced
  • ¼ teaspoon Garlic salt
  • ¼ teaspoon Italian seasoning
  • Black pepper

Instructions

  • Wash, peel and slice the cucumbers into ½-inch slices. Discard the ends.
  • Remove a little of the center of the cucumber with a small scoop or measuring spoon making a divot in the cucumber.
  • Mix together the cream cheese, mayonnaise, and ranch dressing until smooth and creamy.
  • Add the dill, garlic salt, and Italian seasoning. Mix until combined.
  • Place the filling into a piping bag with a star tip attached. Pipe about 1 Tablespoon of filling into the cucumber's divot.
  • Slice the tomatoes in half. Place a tomato half onto each cucumber filling.
  • Sprinkle with black pepper and serve.

Notes

  • If you want a thicker consistency to the cream cheese filling, use a powdered Ranch dressing mix that comes in a packet rather than dressing from an actual bottle. The latter can make the filling quite wet but it really depends on preference. 
  • Grape or cherry tomatoes are the ideal size for these cucumber appetizers. If you don’t have these types of tomatoes then feel free to use regular tomatoes and cut them into bite-size pieces to top the cream cheese filling. 
  • It’ll definitely be much easier to mix the cream cheese, mayo, and dressing with an electric or stand mixer but if you don’t have one then simply mix by hand. In that case, make sure that the cream cheese has softened by reaching room temperature.
  • Cheap disposable piping bags can be used when assembling these cucumber appetizers otherwise consider using a Ziploc bag and cutting the corner. You won’t be able to use any fancy star tip when using a Ziploc bag but your appetizer will still be super delicious. 
  • A melon baller is a great tool to use for removing cucumber flesh from the center of each slice. Alternatives include a small scoop or even measuring spoon.
